浅析中国中式快餐业的发展现状及对策
摘要:在西式快餐业巨头肯德基,麦当劳等国外快餐企业的强烈刺激下,本土中式快餐
已经逐渐成长成为我国餐饮市场上的一支重要力量。本土快餐业逐渐发展壮大,表现在数
量上的增加,市场份额的扩大,发展速度的加快,其质量和内涵也发生了深刻的变化。部
分中式快餐企业管理水平有所提高,经营业态日趋丰富和经营模式标准化,网点数量和从
业人员队伍继续扩大,社会地位和作用有所提升等方面。但是目前,我国快餐业存然在很
多问题与不足,主要表现为缺少着名品牌、缺乏高级管理人才、企业规模小、连锁化进程
慢等等,这在一定程度上制约了中式快餐业的发展。我国快餐业在追求发展速度的同时,
必须着手解决好制约快餐业发展的各种问题,从而推动我国快餐业健康、有序地发展。
笔者拟通过在宜宾学院国贸专业几年所学的知识,在大量阅读相关书籍和资料的基
础上,对中国快餐的现状和发展策略进行研究。本文通过对整个快餐行业发展近况及中
式快餐企业的发展概况、现状进行分析,找出中式快餐发展中的瓶颈和问题,最后对现
实发展当中的遇到的问题提出一些参考性的意见,希望对中式快餐企业的发展有所借
鉴,希望中国的本土快餐能够很好的发展壮大走向国际化。
Abstract:With strong stimulation by the Western fast food giant KFC, McDonald's and other foreign fast-food companies, the local Chinese fast food restaurant in China has gradually grown into a major force in the market.
Local fast-food industry has grewn, the increase in the number of performance, market share expansion, the pace of development, its quality and content, profound changes have taken place.Part of the Chinese fast food has
increased the level of business management, business conditions and business model increasingly rich standardization, the number of outlets, and continue
to expand the ranks of employees, social status and role has improved and so
on.But for now, then keep the fast food industry in China on many issues and shortcomings, mainly for lack of well-known brands, the lack of senior management personnel, enterprises are small, slow process of chain, etc., which to some extent, restricted the development of Chinese fast food industry. China's fast-food industry in the pursuit of growth, we must proceed to restrict fast-food industry to solve the various problems, thus promoting the healthy fast food industry in China, and orderly manner. The author intends to International Trade by Yi bin professional knowledge learned several years, a large number of books and reading materials, based on the current situation of Chinese fast-food research and development strategy. Based on the latest development of the fast food industry and the development of Chinese fast food company s, current situation analysis to identify bottlenecks in the development of Chinese fast food and problems. Finally, among the real problems encountered in the development of some of the comments refer to the hope that the development of Chinese fast food enterprises have reference, for that China's domestic development and growth of fast food can be a very good internationalization.

引言
“快餐”一词是20世纪80年代进入中国的外来语,英文“fast food”,在台湾,香港等地被译为速食,它体现了省时、方便、经济的特点。为了区别于来自美国等西方国家的西式快餐,我们把中国的快餐称为中式快餐(Chinese fast food or Chinese-
style fast food),,中式快餐又有现代快餐和传统快餐之分。
