四川火锅的出现要稍微晚一些,大约在清代的道光 年间(1821-1851)才有四川火锅的出现。经过多方 考证,四川火锅真正的发源地是长江之滨--酒城泸 州的小米滩(现高坝二五厂)。当时,长江边上的船 工们跑船常宿于小米滩(小米滩在当时是四川境内长 江边上的一个很适中的码头)。停船即生火做饭驱寒, 炊具仅一瓦罐,罐中盛水(汤),加以各种蔬菜,再 添加辣椒、花椒祛湿(因为有"菜当三分粮,辣椒当 衣裳"之说)。船工们吃后,美不可言(在他们心中), 就这样一传十,十传百,在特别青睐的火锅, 它的食用方法和奶酪火锅差不多,事先将巧 克力放入锅中煮成汁,再用长柄叉子叉着水 果片,蘸着锅中的巧克力汁一片一片地吃, 一直到火锅中巧克力汁蘸完为止。因为这种 火锅在吃起来的时侯别具一番情趣,因而其 在瑞士也颇受青年恋人们的喜爱。

朝鲜酸菜白膘火锅
该国的火锅以“酸菜白膘”为标准,以木炭 火电厂煮食,熬的汤为海参汤。酸菜和我国 冬季用盐水浸泡,滤干腌泡而成,而所用的 白膘肉即是五花肉煮熟切成片或是蒸过一遍 后去除油腻,吃时再配以血肠、蛤蜊等,朝 鲜火锅的这种吃法虽说比较原始,但吃起来 却很十分的爽口。

关东煮火锅海鲜火锅源自3、用料更广泛:以传统的毛肚火锅 的"牛杂"到今天的飞禽、走兽、山珍、海 味等原料的增加,四川火锅的品种可以说 数不尽数了;用一句话概括就是凡是能吃 的食物都可以在火锅中煮或烫食。
4、制作精细:从调味的选用必须是 上乘外,汤料的熬制,原料的加工,味碟 的配备,菜品的摆放,烫食的艺术都十分 的讲究有道理。
一般而言,火锅基本上 只有三大类别,第一种 汤为淡味,而以涮生片 为主,蘸料占重要角色, 涮羊肉及广式打边炉最 具代表,第二种是锅内 的料已熟,如砂锅鱼头、 羊肉炉等,炉火只是做 为保温作用,并用来烫 青菜。第三种是锅内的 料全都熟透了,连青菜 也无需再穿烫,炉火完 全是用来保温的,和大 锅菜无二样,如佛跳墙、 复兴锅等大锅菜的方式。
因投料入沸水时发出的 “咕咚”声而得名。它是 中国独创的美食,历史悠 久。
乾隆皇帝吃火锅成癖,他 曾多次游江南,每到一地, 都备有火锅。相传,他于 嘉庆元年正月在宫中大摆 “千叟宴”,全席共上火 锅1550多个,应邀品尝者 达5000余人,成了历史上 最大的一次火锅盛宴。
我国的火锅花色纷呈,百锅千味。著名的 如广东的海鲜火锅,钙骨火锅食而不腻, 味美无穷;苏杭一带的菊花火锅,清香爽 神,风味独特;云南的滇味火锅,鲜嫩香 辣,饶有风味;湘西的狗肉火锅,享有 “狗肉滚三滚,神仙站不稳”之美誉;重 庆的毛肚火锅,麻辣醇香,名扬天下;北 京的羊肉涮锅风味别致,吊人胃口。此外, 杭州的“三鲜火锅”、湖北的“野味火 锅”、东北的“白肉火锅”、香港的“牛 肉火锅”、上海的“什锦火锅”等,也风 味别具,诱人馋涎。
