Origin of the name
Luoyang water banquet started in the Tang dynasty. It is one of the China's hitherto preserved oldest feast which has been a history of more than 1000 years.

Whole banquet, a total of 24 courses, including the eight cold dishes, four representative dishes , eight hot dishes , four small hot dishes, cold and hot, meat and vegetable, sweet and salty, sour and spicy.

Luoyang water banquet and a generation of empress ,Wuzetian, are closely linked. The first eight cold dishes, four representative dishes , eight hot dishes , four small hot dishes, total 24 dishes, represent that Wuzetian's ruling twenty-four years.

Water banquet originated in Luoyang which has a direct relationship with its geographical climate .Luoyang situated in a basin surrounded by mountains, less rain and dry .In the ancient times ,due to the cold weather, there are not rich fruit, so folk dietary are multi-purpose soup . The reason why we call it water banquet, one is that each dish is inseparable from the soup ,Another is that serving one course , eating up and then one by one, just like flowing water.
