Familiar examples are the metaphors used to describe American cultural diversity in textbooks for students of intercultural competence and communication: these include the comparison of American society with a ‘melting pot’, a ‘salad’ or ‘stew’, ‘tributaries in a stream’, a ‘tapestry’ and a ‘symphony orchestra’ (Jandt 2000, pp. 471-473; Lustig & Koester 2007, p. 58).

This paper should be seen in the general framework of ‘cultures of learning’, a perspective that we have been exploring (Jin & Cortazzi 1993, 1995; Cortazzi & Jin 2002) which shows that learning is interpreted differently in different cultures and that this can result in gaps of expectations and behaviour between students and teachers in international contexts. Such perspectives can change in intercultural adaptation and our use of the term ‘cultural synergy’ (Jin & Cortazzi 1993, 1995, 1998; Cortazzi & Jin 1996) is intended to highlight that adaptation between international students and teachers (or between students from different cultural contexts) is a two-way reciprocal process of learning which increases repertoires of teaching and learning strategies and is therefore a point of professional development for teachers (and for learners as future professionals) to learn more about learning.
