五柳炸蛋是一道传统老式粤菜,五柳菜是用木瓜、胡萝卜、青瓜、荞头、生姜等做成的甜酸酱菜,老广通常用它来烧鱼或蛋。
现在五柳菜并不容易买到,可以用其他酸甜味道的酱菜加洋葱等代替。
我连酱菜也没有,直接给PASS掉了,又加了苦瓜、胡萝卜等。
酸甜苦辣咸,真是五味俱全。
食材
主料:
鸡蛋
苦瓜
油适量
盐适量
米醋1勺
香醋1勺
糖1勺
料酒1勺
生抽1勺
洋葱适量

步骤
1.先准备所有材料,苦瓜,胡萝卜切薄片,洋葱切丝,红辣椒切细丝。
2.再准备酱汁:香醋、米醋、白糖、料酒、生抽,各一勺。
3.锅内放油,略多一些,油热后打入鸡蛋,快速将两面煎黄,蛋黄尚未完全凝固时盛出。
4.原锅直接倒入洋葱、红辣椒,加少许盐,小火炒至洋葱透明变软,加苦瓜、胡萝卜炒出香味。
5.铺上荷包蛋。
6.倒入糖醋汁,加盖煮半分钟关火。
7.用锅铲把荷包蛋切成两到三块,出锅前滴入数滴麻油即可。
小贴士:1、这道菜的关键在于炸蛋,油要稍多,油温要高,蛋白要炸至起泡才更容易挂汁入味,蛋黄最好有点溏心,咬上去软软糯糯的口感非常好。

鸡蛋的吃法

油煎荷包蛋用料:鸡蛋1粒,酱油少许做法:将鸡蛋打入碗中,烧热镬,放入一半碗油,略热放下鸡蛋以中火煎,依个别的喜好,可以煎至半生熟,或全熟,或两面金黄,盛起隔油,放入碟洒些酱油即可。

做法:盐放入水中,煮滚,水沸腾后,将蛋用勺子放入水中煮。
如果蛋壳裂开,加些醋可以使蛋白凝固防止流出来,煮好后马上放入冰水中,这样蛋壳会比较好剥。
煮的时间:三分钟,蛋白凝固幼嫩,蛋黄半熟。
六分钟,蛋白凝固,蛋黄半熟。
十分钟,蛋全熟。

水煮菏包蛋用料:鸡蛋1粒,水2公升,盐1大匙,醋半杯。
做法:盐加入水中煮滚,加醋,把蛋打入碗中,用小火,把蛋倒入水中,当蛋自然成形后捞起放入冰水中,在把蛋的周围修整齐,再放入水中三分钟捞起就行了。

【制作过程】一、先用白盐2.5克、绍酒25克,涂抹鸡颓人外,上面放姜、葱末、五分钟后,上笼蒸约十五分钟,取出待冷,然后将鸡拆肉切成小块,加入味粉5克,白盐2.5克,猪油15克拌匀,将鸡肉腌过待用。
二、把鱼胶、大菜洗净,用汤盅盛起,加入上汤500克、哧粉5克、白盐5克,放进蒸笼,蒸至大菜溶化为上,取出待用。
三、鸡蛋2只蒸熟,将蛋白切片,火腿切片,香菜叶,莨笋切片,熟鸡粒等准备好,然后用12只茶杯,杯内涂少许猪油,把以上的火腿片、香菜叶、蛋白片、芦笋片,鸡粒等都排在杯内。
四、在大菜汤约有七成冷时,才把大菜汤倒入杯内,倒至浸着鸡肉为限,等冻结后,放进冰箱里,一小时后取出,食时从杯里取出一外个的金钟鸡装碟。
