As a native of Anhui Province, I am proud to introduce some of the most delicious Anhui cuisine to you. Anhui cuisine has a long history and is characterized by its use of local ingredients, such as bamboo shoots, mushrooms, and wild herbs. Here are some of my favorite Anhui dishes:
1. Braised Pork Belly (红烧肉)。
This is a classic Anhui dish that is loved by many. The pork belly is cooked with soy sauce, sugar, and other seasonings until it is tender and flavorful. It is usually served with steamed buns or rice.
2. Stinky Tofu (臭豆腐)。
This may not be everyone's cup of tea, but stinky tofu is a popular snack in Anhui. The tofu is fermented in a
special brine that gives it a unique flavor and aroma. It
is usually served fried and topped with spicy sauce.
3. Huangshan Braised Pigeon (黄山烤鸽)。
This is a specialty of Huangshan City in Anhui Province. The pigeon is marinated with soy sauce, sugar, and other seasonings before it is roasted to perfection. It is crispy on the outside and tender on the inside.
4. Li Hongzhang Hotchpotch (李鸿章烩饭)。
This is a famous dish that was created by Li Hongzhang, a famous general in the late Qing Dynasty. It is a hot pot dish that includes a variety of ingredients, such as chicken, ham, mushrooms, and bamboo shoots. It is usually served with rice.
5. Fried Mandarin Fish (糖醋鲤鱼)。
Mandarin fish is a freshwater fish that is abundant in Anhui Province. It is fried until it is crispy and then
served with a sweet and sour sauce made from vinegar, sugar, and other seasonings.
