Hypothesis It is suggested that fiber behaves as a sponge with both fibrous and amorphous characteristics. The physiological actions of this sponge, as it passes along the gastrointestinal tract, are dictated by the physicochemical properties of its components (Table 1). Dependent on the capacities of the fiber for gel formation and water adsorption, transit time may increase or decrease in different parts of the gastrointestinal tract (stomach, small intestine, colon). Gel formation also slows absorption of solutes in the upper gut. In addition, fiber constituents have an active biological role as sequestors of bile acids, cations, and possibly electrons. In the large bowel, fiber provides a matrix that alters bacterial and solute interaction. Fiber is also subject to selective bacterial degradation in the colon with consequent alteration of other physicochemical properties. Accordingly, the metabolic effects of fiber will vary with the physical and chemical composition of its constituents dependent on the degree to which there is modification of gastrointestinal flux, nutrient and bile-acid adsorption, colonic metabolism, and fecal cxcretion. This contrasts with the development of methods for measuring fiber in ruminant physiology where the role of isolates, such as cellulose and lignin, are well understood.

The physical and chemical properties of the sponge matrix may be modified in the upper intestine dependent on pH, osmotic conditions, and electrolyte concentration. However, because fiber is resistant to degradation by small intestinal enzymes, structural changes are relatively minor. The physiological actions of fiber in the small intestine are a result of gel formation, water-holding capacity, cation-exchange, and bile-acid adsorption.

Dietary fiber consists of a complex group ofsubstances that differ in chemical and morphological structure and in physiological effect. The heterogeneity of plant fiber makes the design and comparison of experiments difficult. Results may vary with the fiber composition of the food that is dependent on the age, species, and anatomical source of the plant material. In addition, an alteration in the intake of fiber-rich foods may necessitate concomitant changes in other dietary components. A systematic approach to these problems requires the isolation and study of individual fibers (pectin, cellulose, hemicellulose, and lignin). However, chemical extraction from the plant produces isolates of undefined chemical and physical nature which may have altered physiological properties. The surface area of the fiber, which is influenced by the method of preparation, may be one important physical property influencing the nutritional effects. Southgate et al.
