(Pause)Commentator: The key here is to start a conversation by finding something you and the other people have in common-something that’s the same, or that affects both of you. Here, the speakers are at school. They start by talking about the class and the teacher. At a party, you might mention the food or the music. What about other time? Anything that you and the speaker have in common-even the weather. You both already know it’s cold or hot or rainy. But people talk about the weather because it’s something they have in common. The strategy is to find something that is the same for you and the person you’re talking to.Number 4Man: Well, I’m a little shy. Of course I like meeting people, but it’s kind of difficult. So before I meet someone, I sometimes think about what I want to say. I’ll think of something about school or work. It depends where I am. Anyway, I usually do that before I say my name. So I guess planning what I want to say is important for me. I don’t practice or memorize it or anything…I just think about it. (Pause)Commentator: His strategy is to think about what he wants say. By thinking about the topics, he knows what he wants to say-or at least what he wants to talk about. That makes it easier.Task 7Listening: You will hear someone talking about how to remember different thing. There seem to be some very effective methods we can all use. Listen to the recording and take notes of what you hear to fill in the table below.We all have problems remembering things, but there are techniques that you can use to help you remember. Let’s take the activities that you have just done.First of all, remembering the names and jobs of the people and where they comes from. Here, the best thing is to imagine images of the people and the names that you want to remember. For example, we have Tom the student from Australia. Well, for Tom you might imagine a tomato. Then Australia has a shape a bit like a dog. Now let’s imagine it’s a very clever dog and the dog is reading a book. So now we have a picture of Tom the student from Australia.Now let’s take the numbers. The best thing to do here is to break the larger number up into smaller numbers and then think of things that the numbers remind you of, such as a birthday, a particular year, the number of a house. Or with a number like 747 you might think of a jumbo jet-a Boeing 747.With the directions the best thing is to imagine you following the directions. Create a picture in your mind of yourself going down the street. Count the turnings 1,2. Then turn left. Now imagine going past a supermarket and a cinema and so on.When you have to remember lists of words try to build them into a story. So with our words we might start with, “The sun was shining, so I went for a walk. I saw a horse wearing trousers. It was kicking some bananas over a television. The bananas landed in a bag, and so on. Again the funnier the story the better.”Try some of these techniques and you’ll be amazed at what you can remember.Task 8Listening: You will hear an interview with a professor about world languages. Um, do we know when, where and how language originated?KT: Ah, that’s a difficult question to answer; or rather the answer is no one really knows. What we do know is when language was first written down.I: Ah hah, and that was…KT: That was about five and a half thousand years ago, in about 3,500 BC. The Sumerians, who lived in Mesopotamia, were the first people to write down their language. They used symbols called pictographs to represent everyday objects—a bit like Egyptian hieroglyphics—and the first actual alphabet was developed around 3,500 years ago by the Phoenicians, who lived on the eastern coast of what is now Syria. English is next with about half a billion speakers and Hindi, Spanish and Russian are not too far behind. These five languages account for half of all the conversations in the world!I: Hah, hah, hah. And is it true that Mandarin is the biggest language? I mean the one with the most number of words.KT: Again, it’s difficult to say, but the latest thinking is that English is actually the biggest, largely due to the number of technical and scientific words it contains. There are at least a million words in English. Most native speakers only use about 10,000 words, that’s one per cent of them.I: Hah. Only 10,000.KT: Yeah, and can you guess which are the most common of these? The most used words in English.I: Huh. Let me think. Um, maybe ”be”?KT: Well, according to recent research, where tens of thousands of hours of conversation have been fed into computers and analyzed, the most common word is “the”.I: Oh, and “be”?KT: Well, “be”, we think, is the most used verb in English. But of course there are different forms. Er, what do you think the most common noun in spoken English is?I: Mm, the most common noun? Erm maybe something like…er, oh, I’ve no idea. You’re going to have to tell us.KT: Hah, hah, hah. Well, you just said it, actually. Apparently it’s “thing”.I: Mm. Hah…OK…hah. What about the origins of words? Where does English come from?KT: Well, modern English, which 500 years old, is mixture of mainly Romance and Germanic languages. Greek and Arabic have also provided English with many words. Er, did you know “sugar”come from Arabic? And, from other languages. From example, did you know that “coffee” comes from Turkish and that “chess”, the game, is Persian word?I: Oh, no.KT: Where do you think “ketchup” as in tomato ketchup, comes from?I: Er, I’ve never really thought about it. I’ve no idea. Hah,hah,hah. America?KT: Hah,hah,hah. It’s from the Malay language. A traditional Malaysian sauce I believe.I: Ah.KT: How about “shampoo”?I: Mmm, it sounds a bit oriental to me. Maybe Japanese?KT: It’s actually a Hindi word, from India. The list is endless.I: Er, you mentioned India just then. Isn’t that a country with hundreds of languages?KT: Well, I don’t know about hundreds. I think Papua New Guinea has got the most with over eight hundred and fifty separate languages, but India has got dozens of languages. The bank notes there have got thirteen languages written on them. I suppose they’re the main languages. Um, most people there speak at least two or three languages.I: Um, talking of which…and one final question. To speak tow languages fluently is difficult enough, but have you any idea what the highest number of languages spoken by one person is? KT: There is, or was, a Frenchman, I, er, can’t remember his name, but he spoke 31 different languages. All of them fluently!I: Oh. On that note, Professor Thomas, we’ll say thank you very much and, er, au revoir, auf Wiedersehen, arrivaderci, or ,sayonara, adios.Task 10Listening: you will hear someone talking about some language problems you may encounter while in the United States. Listen to the recording and take notes of these problem.Speaking a foreign language in a classroom is one thing, but living in society where you have to use this language on a daily basis is completely different. So here are some language problems you may encounter while in the United States.--You might not understand the local accent right away. Regional accents vary greatly. In a group of people from all over the U.S., Americans can usually pick out who is from Boston, New York, the Midwest, or the South, just by the way they speak. Give yourself some time to get usedto the local accent, and in time, you will probably find yourself speaking in the same way.--Americans might not understand you right away. You will also have your own accent and you might use a different vocabulary. Try to speak slowly at first to make sure you are understood. Don’t be shy. Ask others to speak slowly if you have trouble understanding them.--Americans use a lot of slang in their speech. Their language is very colorful and full of imagery and it might take some time to completely understand it.--Humor is also an important part of American English. Some international students have a little trouble adaption to this informal style of conversation, and they also have trouble understanding whether the person they are speaking with is being serious or not. This, however should be interpreted as sign of friendliness rather than a show of disrespect.--You might not know all the abbreviations and technical terms used in your study program or workplace. Term such as “poli sci” for political science, “forms” for dormitories, or “TA” for teaching assistant, are just a few examples of campus slang you will encounter. The abbreviation is often the first syllable of the word or, if two or more words are together, their initials. If you don’t understand a word or an abbreviation, simply ask the meaning.You should give yourself time to adapt to the language and don’t hesitate to ask people to repeat what they have said, to speak slowly, or to explain what they mean. It would be wise to carry a dictionary with you in case of an emergency. Most importantly, don’t be afraid to make mistakes. I thought “it looks like I’ll be needing the medical insurance after all”, but no. The guy with the bat just said “Now stay cool and you won’t get hurt. We’ll empty the trunk and be on our way”; It took me a second to realize he meant the “boot” and that he was going to rob us. Emma: You’re joking.Chris: I wish I was. Anyway, they told Amanda and the kids to stay in the car, not that they were going to get out, and told me to open the boot. They took everything out of it—the luggage, of course, our coats, even the spare type. They didn’t take our souvenirs and things—they were in the back with the kids. And then they put everything into their car and drove off.Emma: So Amanda and the kids were OK?Chris: Oh yes. We were all fine—a bit shaken up but fine. It didn’t take long for the polite to arrive. Well, one thing I do to be safe is I always tell someone exactly where I am going, usually my roommate. So somebody knows where I am at all times.And another thing is: When I come home late at night , I always have my keys ready at the front door, so I don’t have to stop there and look for my keys in my purse. Oh, and one more thing I do is when I am on the subway platform, I always am sure to stand near other people. I don’t like to be standing along on the subway platform.Finally, Paul.Paul: Let’s see, what do I do to be safe? Well, when I ride on the subway late at night, I always try to ride in the car with the conductor.And if I am on the subway ,or even walking down the street, I never state at anyone. Robert Jenkins, his wife, Anne, and their three children were asleep at home when they heard a noise at 3 a.m. The rabbit thumped so loudly that it woke the Jenkins family just in time to see a man and a woman leaving the scene of the crime on stolen mountain bikes, Police later arrested the couple.Chuck: That is quite a pet! Nancy, I understand you have another story for us.Nancy: Yes, I do, Chuck. This one’s about a robber who felt especially guilty about the crime he’d committed.A robber walked into a bank, put a bag on the counter, and ordered the teller:”Fill it up—I have a gun. ” The teller put all her loose cash in the bag, and when the robber demanded more, she got bundles of bills from other tellers. Eventually, the robber told her, ”That’s enough ”and walked out with about five thousand dollars. CListen to this conversation.Questioner: So how does a photocopier work?Explainer: Well, basically they work on the principle of electrical charges. Modern photocopiers make use of static electricity-no ink is involved, as it used to be.Questioner: Well, how do the marks get onto the paper?Explainer: Well, if you open up the inside of the photocopier underneath where you lay the sheet of paper you want copying, you'll see... ooh, you'll see a lot of things going on.Questioner: Well, what actually happens when you press the start button?Explainer: well, there's a drum, which is specially coated with a material which conducts electricity when light shines on it. This drum turns around. First it's given a negative static electric charge. That's very important.Questioner: What does the light do?Explainer: Well, you see, at the same time as the drum is being charged, your original which you've laid face down over the glass top is exposed a little at a time to a light which moves over the document. This image is projected onto the drum as it revolves and the electrostatic charge destroys the light.Questioner: Right. But...um you said that the image, or printed material, that it no linger comes from ink, as it used to, so how do the marks get onto the paper?Explainer: Mhm. Yeah, well before that can happen toner power which is negatively charged is dusted or brushed onto the drum. And it is attracted to the charged parts on the drum. That is the toner sticks to those parts. And those are the marks on the document, that is, the parts that have kept their el...their static electric charge.Questioner: Right. Yup.Explainer: And w...after that comes the transfer stage. The sheet of copy paper is positively charged. And in this way it attracts the toner.Questioner: And is that when it actually comes out of the photocopier?Explainer: That's right.Questioner: But why's the paper hot when it cones out of the machine?Explainer: Ah, well.12.2 What do I have to do? AYou'll hear three conversations. Here's the first.Woman: OK, Bob. So first of all, you make sure that there's paper.Man: Yeah, uhuh.Woman: Yes, fine...here. And then you put the document down. Face down.Man: Mhm.Woman: Right. And then you indicate in the digital display here how many copies you want. Man: Mhm.Woman: So that's...er...what? Two. We want two.Man: Fine.Woman: And then you press the button.Man: Easy as that?Here's the second conversationMan: OK, so you've got your document. OK, Two pages. So, the first page, OK, you turn face up. Woman: Yeah.Man: And you feed it into the slot here, and it takes it in automatically.Woman: Oh, right.Man: Yeah? And then you dial the number that you want.Woman: What here?Man: Just there, yeah. And you...you press the green button.Woman: Right.Man: Ok, And it dials the number automatically.Woman: Yes.Man: And it connects with the fax at the other end. And...um...and then it automatically sends the first page. It just feeds through.Woman: Oh, right, yes.Man: And then when the first page is finished, there's a "beep". ..and...er...and it's simple, you just feed in the second page.Woman: Straight away after the other one?Man: In the same way, that's right. that's right.Woman: Right.Man: Yeah. And then at the end there's another beep, which you ignore and wait for the... just wait for the line to disconnect and then you see the display there says: FAX DONE. And that's it. Woman: Oh, right. Oh, I think I can manage that.Here's the third conversationWoman: OK, so you want me to set the alarm for tomorrow morning?Man: Show me how to do it, yeah.Woman: OK, I'll show you. First of all, you press MODE.Man: Yeah.Woman: That's what it's set at now, 6.07.Man: NO, no, no.Woman: Too early?Man: Too early.Woman: Right. I press this button.Now,7.07?Man: No.7...7.30.Woman: 7.30.OK. So I press the other button.8,9,10...Man: It's a bit like the video.Woman: It is a bit, isn't it? You just have to keep on pressing that button, untill we get to 28, 29,30 OK? Now press MODE again. But the numbers are still flashing. And then I press that and the alarm is set to come on.Man: All right.Woman: Tomorrow morning at 7.30.Man: Excellent.Woman: A pleasure.12.3 A production process BListen to this talk about how chocolate is made.Speaker: In the case of all Cadbury's chocolate products the basic ingredients are, of course, coca beans. We buy our cocoa beans from Ghana and some from Malaysia. 50,000 tonnes of cocoa beans are processed each year at the factory but that's before the actual chocolate -making process can be started.When they arrive at the cocoa factory the cocoa beans are sorted and cleaned. And then they're roasted in revolving drums at a temperature of about 135 degrees. The actual time for roasting depends on whether the use at the end is for cocoa or chocolate.Now after that, the next processes are called kibbling and winnowing. Well first, in the kibbling stage the beans are broken down into small pieces. And at the same time the shells are blown away by air currents. The technical term for that process is "winnowing". And so, then you've got the broken pieces of cocoa beans. And those are known as "nibs". OK?Well, now in the next stage the nibs are taken and ground in mills until the friction and the heat of milling reduces them to a thick chocolate coloured liquid. The result of the grinding stage is known as "mass". Now, this contains 55 to 58% cocoa butter and, of course, that solidifies as it cools. And it's the basis of all chocolate and cocoa products.Cocoa powder is made by extracting about half the cocoa butter through pressing in heavy presses. And that cocoa butter is later added back in the chocolate -making process.Right then, now after the mass has been produced, we come to the actual chocolate-making process itself. I'm going to tell you about the production of milk chocolate.Well, at the milk factory the mass, the cocoa mass, is mixed with liquid full cream milk and sugar which has already been evaporated to a very thick liquid. The resulting chocolate creamy liquid is then dried. At that stage it's called 'chocolate crumb'. Then that's taken to our factories at Bournville and Somerdale in Bristol.There, the "crumb" is mixed with the additional cocoa butter and special chocolate flavourings. And this is then turned into a kind of paste. And it's ground again and pulverized further.The chocolate, which has had sugar and cocoa butter added to the mass before grinding and pulverizing, now undergoes the final special production stages. Now, the most important component of chocolate as far as the texture is concerned, is the addition of fats. The final processes of conching and then tempering are essential in the process: they control the texture and viscosity of the chocolate before it can be used in the manufacturing process. Are you with me so far? Good! Now "conching" involves mixing and beating the semi liquid mixture to develop flavour and reduce the viscosity and the size of the particles. Well basically, what this means is that it stops it becoming too sticky and enables it to be manipulated. And then comes the tempering. This is the last stage and it's crucial: what it means is mixing and cooling the liquid chocolate under very carefully controlled conditions to produce chocolate in which the fat has set in its most stable crystalline form.It is the tempering of the chocolate that gives it the famous Cadbury smoothness, and gloss and the snap. Without this last process, the chocolate would be very soft and gritty, and there'd be large crystals inside it and it would have a very dull gray appearance.Well then, there we are, that's how milk chocolate is made...Unit 13 Jobs and careers13.3 Interviews BYou'll hear an extract from two interviews.Here's the first.Interviewer: Good morning, Miss...Sue Jones: Miss Jones. Good morning.Interviewer: Miss Jones, yes, right. Hi. Um... now, you'd like to join our team, I gather.Sue Jones: Yes, I would.Interviewer: That's...that's very good. Er... I'd like to know a little bit about you Perhaps you could tell me... perhaps we could start...if you could tell me a bit about your education.Sue Jones: Oh, yes, right. Well, I left school at 18 and for the first two years I went to Gibsons, you might know them, they're an engineering firm.Interviewer: Ah, yes, right.Sue Jones: Um... and after that, I wanted to do a course, so I... I did a one-year full -time PA course and went back to Gibsons. I was PA to the Export Director. I stayed there for another two years and ...and then moved on to my present company. Um...that's Europa Marketing... um...Mr. Adair, the marketing director, offered me a job because Gibsons had...had worked quite a lot with Europa Marketing.Interviewer: Oh, yes, Europa Marketing... yes.Sue Jones: And I've been with them for three years now...um...first with the Marketing, Director and... and now I'm with the Sales Director.Interviewer: That's all very interesting, Miss Jones. Um... I... I'd like to know, what did you enjoy most at school? What was the course that you enjoyed most?Sue Jones: Ah...foreign languages I liked best.Interviewer: Foreign languages?Sue Jones: We did French and German. YesInterviewer: Mhm. And are you quite fluent in those now or...?Sue Jones: Yes, a bit rusty not but...um...obviously the more travel I can do the more I can use my languages and I'd like to learn another language. I assist the Sales Director by arranging these visits, setting up meetings and presentations and I... I deal with all her correspondence I've not been able to go with her on any...on any of her trips abroad, but I've been to firms in this country, several times on my own...um... to make these arrangements. Interviewer: It sounds as if you're very happy there, Miss Jones. I'm curious why you'd like to leave them and join our company?Sue Jones: Well...um... I know the reputation of Anglo-European and it has a very good reputation. And I feel that I would have more scope and opportunity in your company and the work would bemore challenging for me. I might be able to possibly travel and use my languages because at the moment most of my work is... is rather routine secretarial -type work and I like the idea of more...um... challenges in my life really...Interviewer: Yes, aha, aha. I don't panic in a crisis and I...I enjoy working with all kinds of people. I...I even like...um... P... People who are, you know, bad tempered or something like thatInterviewer: Yes, but wh...where do you see yourself in let's say five years' time?Tom Richards: Um... well, I...sort of the long-range thing. Well, I...I see myself in the public relations and...er...well, one day I must admit I would rather like to open up my own consultancy in my own home town.Interviewer: Mhm, what is it specifically about Anglo-European PR that attracted youTom Richards: Er...well, first of all, I want to leave my present employers because they're a small company and...er... I know about Anglo-European PR,I mean, they're a...they're a good company, larger. I think I'll have more scope... er...the work will be more challenging. I mean, quite a lot of what I do at present is quite boring, it's...it's routine secretarial work.Interviewer: And...and you'd like to move on?Tom Richards: Yes, if I could, you know, hopefully to a job that gives me more opportunity. So I can use my initiative.Interviewer: Mhm.Tom Richards: Can I just ask you this question? I suppose I get a little bit sort of full of the 'Wanderlust' and that's why I want to travel.
