1.Knives are a necessary component of food preparation and are often handled without a second

thought. Unfortunately they also lead to a number of serious injuries on the job. To help ensure your safety and the safety of your fellow employees it is important that you follow a few basic safety rules. 刀具是准备食物过程中必要的工具并且经常被随意放置。遗憾的是,在使用刀具的过程中也引发了许多严重的伤害。为了保证你和同事们的安全,遵循一些基本的安全条例很重要。

2.First always use clean, sharp knives. Did you know that a sharp knife is safer to use than a dull

one? If you are using a knife that appears dull, notify your supervisor so that it can be sharpened.

3.Next be sure to use the knife for its designed purpose. A kitchen knife is not designed to be used

as a screwdriver or to pry things apart. An alarming number of claims occur when employees attempt to pry apart or cut frozen food such as hamburger patties or bagels. If you must pry something apart, use a blunt object or better yet, thaw the item first. When using a knife to cut, use the right knife for the job. Do not use a knife that is too long, too short, too flexible or too inflexible. 4.If you happen to drop a knife, remember to always let a falling knife fall, attempting to catch a

5.When using a knife or slicer, remember to wear cut resistant gloves. Cut gloves are a standard

type of Personal Protective Equipment that are designed to place a barrier between your hand and the sharp blade. Cut resistant gloves will help to prevent you from being injured while cutting foods. 使用刀具或切片机时,切记戴上防切手套。切割手套是标准类型的个人防护设备,

6.When cleaning knives, always wash them separately, do not drop them into a sink with dishes or

pots as they might not be seen. When using a dishwasher, send them through on their own rack.

Small knives should be placed in a basket. 清洁刀具时,始终分开清洗,不要将刀具与盘碟

或壶罐混放在一个水池中,因为可能无法看清刀具。使用洗碗机时,将刀具放在其自身的

7.Finally when storing knives do not place them in cutlery blocks or drawers. Knife blocks can

create sanitation issues when they become dirty. Drawers require you to reach into them to remove a knife exposing you to the potential of a cut or puncture wound. Knives should be stored

on magnetic racks on a wall, preferably above a counter. The knifepoints should point down.

8.Following these simple basic rules will greatly reduce the potential of you or a fellow worker
