Tenderloin ['tendəlɔin](嫩牛柳,牛里脊),又叫Fillet(菲力),是牛脊上最嫩 的肉,几乎不含肥膘。由于肉质嫩,煎成3成熟、5成 熟和7成熟皆宜。
Rib-eye(肉眼牛排),瘦肉和肥肉兼而有之,由于含一定肥膘,这种肉煎烤味 道比较香。食用时不要煎得过熟,3成熟最好。

Sirloin ['sə:lɔin](西冷牛排,牛外脊),含一定肥油,由于是牛外脊,在肉的外 延带一圈呈白色的肉筋,总体口感韧度强、肉质硬、有嚼头,适合年轻人和 牙口好的人吃。食用中,切肉时连筋带肉一起切,另外不要煎得过熟。
T-bone(T骨牛排),呈T字型,是牛背上的脊骨肉。T型两侧一边量多一边量少, 量多的是肉眼,量稍小的便是菲力。此种牛排在美式餐厅更常见,由于法餐 讲究精致,对于量较大而质较粗糙的T骨牛排较少采用。
