各种川菜的做法川菜的精髓在于“麻、辣、鲜、香”四大要素,所以说川菜的精髓是在于麻辣为主。

川菜之所以受到很多人的喜爱,主要是因为四川的美食实在是太多了,这不我再说几个我比较喜欢吃的菜式就是:麻婆豆腐,鱼香肉丝,麻婆豆腐甚至还有猪蹄。

川菜代表菜品很多,下面就来分享一下各种川菜的做法。

今天我来介绍一下吧这个是我最近喜欢吃的一个菜哦!是在成都街头才吃到的,特别好吃!当然还有最好吃的就是麻婆豆腐了。

其实四川的美食非常多也很多(很多地方也开发了当地的特色菜)川菜除了麻辣香嫩以外还特别好吃的原因是因为味道很独特!就是这个味道特别正宗。

一、食材准备主料:北豆腐;辅料:蒜苗;郫县豆瓣酱;调料:老抽;花椒;麻油;姜;蒜;豆瓣酱(没有可以用豆瓣酱代替);盐;白糖;生抽。

(主要参考一下自己喜欢吃辣的可以多放点辣椒)1、豆腐切成3厘米左右厚的片;姜切丝,蒜切末。

香菜切段。

郫县豆瓣酱倒入碗中,加上水搅拌均匀备用。

郫县豆瓣酱中会有一部分水会渗出,这部分可以在炖之前让它充分吸收;炒豆瓣酱时也会带出豆腥味,所以放入锅中一定要用小火哦。

另外可以先把蒜瓣切碎,然后和蒜苗放在一起爆炒一下。

然后放入豆瓣酱炒香。

2、锅内加入水烧开倒入少许食用油烧热;放入姜片、花椒粒爆香,倒入一小勺豆瓣酱。

倒入水没过豆腐,大火煮开。

煮开转小火焖炖20分钟。

将豆瓣酱中的水分倒掉(因为豆瓣酱很咸所以在炒的时候需要适当放盐)。

然后放入一勺生抽、一勺老抽、一勺白糖、一小勺麻油、少量水。

(根据自己喜欢调味就可以了)(注意盐的量可以放少一点)。

大火烧开。

转小火慢炖。

(主要是为了让豆腐不会糊锅底或者炖不烂。

)等汤汁变少之后,将豆腐块放到一个盘子里放在一旁备用。

(因为是现做的所以这个时候不要直接下锅翻炒哦如果豆腐已经糊了就不要了,切成小块之后会非常的老而且不容易嚼)(一定要注意不要用太久)。

3、姜,蒜,郫县豆瓣酱(没有可以用豆瓣酱代替);4.盐,白糖(不喜欢吃辣的可以少放),老抽(如果没有老抽可以用生抽代替),香油(如果没有的话也可以用盐代替)这是豆腐的主要配料;5.大蒜,拍碎;6.蒜苗;7.麻油(这里可以不用油也可以不用,油要完全渗入食材中)。

麻辣香芹鱼肉丁的烹饪方法:1、香芹洗净切段;2、鲅鱼收拾干净,片下鱼肉,切成小块或条,用料酒、少许蛋清和干淀粉拌匀,腌20分钟;3、腌好的鱼均匀拍上面粉;4、锅入油,油温约170度时将鱼肉一块块放入锅中,中火炸至微黄;5、准备好葱姜蒜和干辣椒;6、锅入油,油微热时下入葱姜蒜、干辣椒和花椒,小火慢慢煸出香味,然后倒入香芹,中大火翻炒;7、倒入炸好的鱼丁,翻炒片刻后调入少许香油和盐即可出锅。

健康小贴士:1、炒的时候无需放任何液体调料,此菜吃的就是干香的味道;2、炸鱼肉的时候要一块块夹入,以免粘连;3、煸炒辣椒和花椒的时候油温不要太高,而且一定要小火,否则一下锅就糊了。

川菜文化

川菜文化作为中国八大菜系之一,同时也是味型最多、最有特色、民间的最大菜系,四川菜系以调味与菜式复杂多样且富有特色,“五味俱全”而突出麻辣,口味清鲜与醇浓并重而著称。

川菜有“七滋八味”之说,享有“一菜一格、百菜百味”之美誉,故国际烹饪界有“食在中国、味在四川”之论。

长久以来,川菜在烹饪上以选料精细、烹饪严格、品种丰富的特点受到人们的喜爱与推崇,在中国具有举足轻重的地位。

川菜的足迹已经遍及全国,并早已走向海外,成为外国人日常生活中的美味佳肴。

川菜目前是涉及人口最多、经营门店最多的菜系,从全国餐馆营业额统计来看,川菜影响力已跃居第一位。

川菜系也是一个历史悠久的菜系,其发源地是古代的巴国和蜀国。

在战国时期墓地出土文物中,已有各种青铜器和陶器食具,川菜的萌芽可见一斑。

川菜的出现可追溯至秦汉,早在一千多年前,西晋文学家左思所著《蜀都赋》中便有“金垒中坐,肴隔四陈、觞以清酊,鲜以紫鳞”的描述。

唐宋时期,川菜更为脍炙人口。

诗人陆游曾有“玉食峨眉木耳,金齑丙穴鱼”的诗句赞美川菜。

东汉末,古典巴蜀菜开始出现自己的特色;到魏晋时,古典巴蜀菜与其他菜系出现分野。

隋唐五代时,中原世祖、文人的迁入使巴蜀经济文化发展到新的高度,巴蜀菜也出现繁荣状况。

至两宋时,川菜发展成独立菜系并达到高峰,这一时期,川菜成为一个在全国具有影响力的菜系,开始向巴蜀之外传递川菜文化。

元明清时期,长期的战乱,导致四川人口锐减,经济、文化遭受摧残,使得南宋以前繁荣一时的四川亚文化受到毁灭性的打击,四川的烹饪文化在全国的地位一落千丈;期间,明末时辣椒由美洲经欧洲间接引入中国,使自巴蜀时期就形成的“尚滋味、好辛香”得到一定程度的发展。

晚晴后期,四川少受战乱及资本主义的冲击,同时由于清政府的重视,四川文化出现了起飞,现代川菜文化开始诞生,到抗日战争前期基本定型。

川菜以重庆和成都两地的菜肴为代表。

所用的调味品既复杂多样,又富有特色;尤其是号称“三椒”的花椒、胡椒、辣椒,“三香”的葱、姜、蒜,醋、郫县豆瓣酱的使用频繁及数量之多,远非其他菜系能相比。
