2.之后进入到燧人氏时期:在这一时期中,人们学会了钻木取火、吃熟食,从此进入石烹时代,这也算得上是中国饮食文化的开端。
主要烹调方法:①炮,即钻火使果肉而燔之; ②煲:用泥裹后烧; ③用石臼盛水、食,用烧红的石子烫熟食物; ④焙炒:把石片烧热,再把植物种子放在上面炒。
3.在伏羲氏时期:在饮食上,结网罟以教佃渔,养牺牲以充庖厨。
人们开始自己养殖捕鱼来获取食物。
4.神农氏:耕而陶是中国农业的开创者,尝白草、开创古医药学、发明耒耜、教民稼穑。
陶具是人们第一次拥有了炊具和容器,为制作发酵性食品提供了可能,如酒、醢、醯、醋、酪、酢、醴等。
鼎是最早的炊具之一,有爪儿因为当时没灶,还有鬲,其爪是空心的,鬶用来煮酒的。
5.黄帝时期:中华民族的饮食状况又有了改善,皇帝作灶,始为灶神,集中火力节省燃料,使食物速熟,而广泛使用在秦汉时期,当时是釜,高脚灶具逐步退出历史舞台,蒸谷为饮,烹谷为粥首次因烹调方法区别食品,蒸锅发明了,叫甑。
蒸盐业是黄帝臣子宿沙氏发明,从此不仅懂得了烹还懂得调,有益人的健康。
6. 周秦时期:中国饮食文化的成形时期,以谷物蔬菜为主食。
春秋战国时期,谷子,作为主食,为五种谷物中的最主要食物。
7.汉代:汉代是我国的饮食文化的丰富发展时期,由于与当时的西域之间在饮食的文化上的交流与融合,引入了如番石榴、胡萝卜、核桃等等的水果蔬菜,同时也学习了许多新的烹饪方式如炸油饼。
刘安发明豆腐,使豆类的营养得到消化,物美价廉,由此产生了许多与之相关的美味,1960年河南密县发现的汉墓中的大画像石上就有豆腐作坊的石刻。
东汉还发明了植物油。
在此以前都用动物油,叫脂膏,南北朝以后植物油的品种增加,相比较以前价格也更实惠。
8.唐宋:唐宋是我国的饮食文化的巅峰时期,过分讲究。
素蒸声音部、罔川图小样,最具代表性的是烧尾宴。
而西方饮食文化的形成也是一个复杂的过程,由于涉及的国家众多,因此从宏观上来说笔者认为可以这样来概括:意大利菜是鼻祖,法国菜是国王,美国菜是新贵。
意大利的菜肴源自古罗马帝国宫廷,有着浓郁的文艺复兴时代佛罗伦萨的膳食情韵,素称欧洲大陆烹调之母,在世界上享有很高的声誉。
公元1533年,意大利公主凯瑟琳狄迈狄琪嫁给了法国的王室储君亨瑞二世的时候,带了30位厨艺卓绝的大师,将新的食物与烹饪方法引介至法国。
法国将意大利与本国的烹调技艺相互结合,兼容并包,去糟取精,创造出当今最负盛名的西餐代表法国菜。
由于意大利向美国移民,加上二次大战及战后美军进驻意大利,意大利菜在美国十分流行,后来经过在美国本土的不断发展,形成了美国特色的美国菜。
