Sucrose comes from Sugar cane(甘蔗) and Sugar Beet(甜 菜). It is a kind of crystal *‘krist+ which has no color .
Ice sugar冰糖
Ice sugar is a kind of sugar after Recrystallization *re’krist(重结晶). It contains the less water and can be easier to preserve.
• People in Japan call it black sugar .But it belongs to dark brown sugar because it only cooks longer than dark drown sugar. It isn’t a new kind of sugar.

• Squeezing sugar cane to get the juices then cook the juices and dry it. • It’s the procedure to make the dark brown sugar.
Black sugar(黑糖)

Yellow sugar(黄糖)
• Yellow sugar also belongs to dark brown sugar ,but it has the less impurities (杂质). So it suits with tea or coffee in afternoon tea.
Icing sugar(糖粉) • Icing sugar is always used in decorating cakes or pastries *‘peistri+(油酥糕点) to make it more delicious.
Soft sugar(绵白糖)
• Soft sugar is granules(小颗粒), so it tastes sweet than other kinds of sugar. • It cakes(结块) easily because it is easy to dissolve(溶解).
Caramel(焦糖)
• Caramel comes from sugar’s Browning Reaction(褐变反应) which makes the sugar’s colour to light brown and it used for adding color and flavour to food.
