10 ways to prevent food poisoningThe UK has more than 850,000 reported cases of people experiencing food poisoning a year, according to the Food Standards Agency (FSA).If you’ve ever had food poisoning, you’ll know how unpleasant it can be, even for a fit and healthy person. Sometimes food poisoning can cause serious illness and death. Most people assume that food poisoning comes from restaurants, cafes and fast food outlets but, according to the FSA, you’re just as likely to get ill from food prepared at home.“People don't like to admit that the germs might have come from their own home,” says Dr Andrew Wadge, chief scientist at the FSA. But it's a common myth to think that food poisoning only comes from a dodgy takeaway.Follow these tips to reduce the risk of food poisoning at home:1. Wash your hands t horoughly with soap and hot water and dry them before handling food and after handling raw foods (meat, fish, eggs and vegetables) touching the bin, going to the toilet, blowing your nose or touching animals (including pets).2. Wash worktops before and after preparing food, particularly after they've been touched by raw meat, including poultry, raw eggs, fish and vegetables. You don’t need to use anti-bacterial sprays. Hot soapy water is fine.3. Wash dishcloths and tea towels regularly and let them dry before you use them again. Dirty, damp cloths are the perfect place for bacteria to breed.4. Use separate chopping boards for raw food and for ready-to-eat food. Raw foods can contain harmful bacteria that can spread very easily to anything they touch, includin g other foods, worktops, chopping boards and knives.5. It's especially important to keep raw meat away from ready-to-eat foods such as salad, fruit and bread. This is because these foods won't be cooked before you eat them, so any bacteria that gets on to the foods won't be killed.6. Always cover raw meat and store it on the bottom shelf of the fridge where it can't touch other foods or drip on to them.7. Coo k food thoroughl y and check that it’s piping hot all the wa y through. Make sure poultry, pork, burgers, sausages and kebabs are cooked until steaming hot, withno pink meat inside.8. Keep your fridge temperature below 5C. By keeping food cold, you stop food poisoning bugs growing.9. If you have cooked food that you're not going to e at straight away, cool it as quickly as possible (within 90 minutes) and store it in the fridge or freezer. Use any leftovers from the fridge within two days.10. Don’t eat food that's past its "use by" date label. These are based on sci entific tests that show how quickly harmful bugs can develop in the packaged food.。

Module 1 My classmates Unit 1

I,my,you,your,he,his,she,her。

Module 4 Healthy food A Healthy

Pyramid For A Balanced DietThis healthy food pyramid is recommended by Ray Kurzweil and Terry Grossman in their books "Fantastic Voyage" and "Transcend" as the basis of a healthy eating plan:Their recommendations refine the food pyramid published by Harvard Medical School to place more emphasis on plant based foods including vegetables, low GI carbohydrates, and healthy fats such as nuts, seed and avocados. Fish, animal protein (lean), and extra virgin olive oil is recommended as well. Are You Eating A Balanced Diet?In order to remain healthy and achieve success with long term weight management, it is necessary that you eat a balanced diet comprising primarily of plant based foods, complex carbohydrates and a limited amount of healthy fats as illustrated in the healthy food pyramid.•Vegetables sho uld be one of the main components of your diet. By includinga large variety of fresh or frozen ve getables of all colours in your diet, notonly will your health benefit from the wide range of vitamins, phytochemicals, minerals and other nutrients that vegetables contain, but you will also find iteasier to keep your weight under control. Vegetables are low in calories, havea high fibre and water content and as a result keep you full and satisfied on fewercalories. Fruits are essential as well, but should be eating in moderation due to the sugar content.•Proteins provide essential amino acids that the body needs to grow and function. While animal sources of protein such as red meat and dairy products contain all of the amino acids required by the body, the downside is that these sources are high in saturated fat, which if consumed in large quantities can lead to weight gain and disease. Better choices of protein are lean white meats, such as turkey and chicken, fish (particularly salmon), soy and vegetables such as lentils, beans and nuts.•Carbohydrates are an important part of o ur diet, and provide the fuel needed by the body for physical activity. However, not all carbs are the same. Refined carbs such as white bread, rice and pasta, sugars and pastries are ra pidly broken down into glucose, resulting in insulin spikes and over time, this can lead to health issues and weight ma nagement problems. Complex carbohydrates on the other hand, such as oats, beans, brown rice and whole grain bread are broken down more slowly into glucose, (in other words they are "low GI"), and therefore much healthier.•Fats are dense in calories, and are the way the body stores energy, so high fat foods can easily lead to weight gain. However, more important than the amount of fat you eat is the type of fat. Saturated fats and Tr ans fats increase the risk of heart disease and can raise cholesterol levels. These are found in butter, animal meats, coconut oil and margarine. Unsaturated fats such as nuts, fish, extra virgin, avocados and flaxseed have anti-inflam matory properties and reduce the risk of heart disease. The key is to replace unhealthy fats with healthy fats. You can achieve a hea lthy balance in your diet by eating a variety of foods, in the correct proportions as shown in this healthy food pyramid.。

Module 4 Healthy food How to prepare and cook food safely素材

How to prepare and cook food safelyStudies show that the kitchen contains the most germs in the home. One found that the kitchen sink contains 100,000 times more germs than the bathroom.Germs such as E. coli, campylobacter and salmonella enter the kitchen on o ur hands, raw food and through our pets. They can rapidly spread if we're not careful. If food isn’t cooked, stored and handled correctly, people can become ill with food poisoning, colds, f lu and other conditions.Washing handsOur han ds are one of the main way germs are spread, so it’s important to wash them thoroughly with soap and warm water before cooking, after touching the bin, going to t he toilet, and after touching raw food.Raw meat, including poultry, can contain harmful bacteria that can spread easily to anything it touches. This includes other food, worktops, tables, chopping boards and knives.“Lots of people think they should wash raw chicken, but there's no need," says food hygiene expert Adam Hardgrave. "Any germs on it will be killed if you cook it thoroughly. In fact, if you do wash chicken, you could splash germs on to the sink, worktop, dishes or anything else nearby.”Take particular care to keep raw food aw ay from ready-to-eat foods such as bread, salad and fru it. These foods won’t be cooked before you eat them so any germs that get on to them won’t be killed.“Use different chopping boards for raw and ready-to-eat foods,” says Hardgrave. When storing raw meat, always keep it in a clean, sealed container and place it on the bottom shelf of the fridge where it can’t touch or drip on to other foods.CookingCooking food at the right temperature will ensure that any harmful bacteria are killed. Check that food is piping hot throughout before you eat it.When cooking burgers, sausages, chicken and pork, cut into the middle to check that the meat is no longer pink, that any juices run clear and that it’s piping hot (steam is coming out). When cooking a whole chicken or other bird, pierce the thickest part of the leg (between the drumstick and the thigh) to check that there is no pink meat and that the juices are no longer pink or red.Pork joints and rolled joints shouldn’t be eaten pink or rare. To check when these types of joint are ready to eat, put a skewer into the centre of the meat and check that there is no pink meat and the juices are no l onger pink or red. It’s safe to serve steak and other whole cuts of beef and lamb rare (not cooked in the middle) or blue (seared on the outside) as long as they have been properly sealed (cooked quickly and at a high temperature on the outside only) to kill any bacteria on the meat’s surface. If you’ve cooked food that you’re not going to eat immediately, cool it at room temperature (ideally within one to two hours) and then store it in the fridge. Putting hot food in the fridge means it doesn't cool evenly, which can cause food poisoning.Hardgrave's advice is to store food in the fridge below 5C (41F). “If your fridge has an internal freezer compartment that is iced up, the fridge could struggle to maintain its temperature,” he says.Washing fruit and vegetablesIt's advisable to wash fruit and vegetables under cold running water before you eat them. Thi s helps to remove visible dirt as well as germs that may be on the surface of your fruit and veg.Peeling or cooking fruit and vegetables can also remove these germs.Never use washing-up liquid or other household cleaning products as they might not be safe for human consumption and you may accidently leave some of the product on the food.Cleaning upWash all worktops and chopping boards before and after cooking as they can be a source of cross-contamination.The average kitchen chopping board has around 200% more faecal bacteria on it than the average toilet seat.Damp sponges and cloths are the perfect place for bacteria to breed. Studies have shown the kitchen sponge to have the highest number of germs in t he home. Wash and replace kitchen cloths, sponges and tea towels frequently.。
