摘要
山梨酸钾是世界卫生组织添加剂委员会允许使用的很少几种防腐剂之一,具有较高的安全性和对霉菌很强的抑制能力。山梨酸钾具有防腐、安全、稳定三大优势,在食品上应用,被美国食品和药物管理部门规定为“公认安全”(GRASS)品种,是国外普通使用的防腐剂之一,作为低毒的食品添加剂,在国最终代替苯甲酸钠已成为必然趋势。我国防腐剂发展已经进入快速发展的时期,现在已成为苯甲酸钠的生产和消费大国,其梨酸钾的产量占世界消费量的40%。目前山梨酸钾已广泛地用于食品、饮料、酱菜、烟草、医药、化妆品、农产品、饲料等行业中,从发展趋势看,其应用围还在不断扩大。尤其是在食品行业的开发利用中,进一步体现了山梨酸钾的价值,目前,在食品行业山梨酸钾已经在在酒类和饮料、酱油、酱制品和腌菜、水产制品、肉制品及香肠、蔬菜和水果保鲜、糕点保鲜中、蜜饯、糖果保鲜、干酪保鲜中、人造奶油保鲜、蛋黄酱和色拉保鲜以及其他产品保鲜中的应用。随着人们生活水平的提高和对身体健康的关注,伴随着食品工程技术的向前发展,食品行业在市场的推动下积极地向着“绿色”、“天然”的方向发展。天然、安全、高效的功能型食品防腐剂的开发和应用将成为未来开发的热点。
