昨日,北京市政府外事办消息,新出版的《美食译苑——中文菜单英文译法》共规范了3102个中西餐饮食名称,其中包括2158个中餐,并向北京市各大餐馆推广。
《美食译苑——中文菜单英文译法》共分三章,分别对中餐、西餐、饮品进行了标准的英文翻译,其中中餐部分细化到八大菜系,包括鲁菜、川菜、闽菜等特色饭菜的介绍和重点翻译。
此次参加翻译的专家不仅有北京外国语大学、清华大学、北京大学等的教授,还邀请了外交部翻译专家、英籍专家、驻外大使等人。
翻译团队带头人、北京外国语大学教授陈琳表示,翻译力争让完全不懂中华文化的外国宾客一眼就能看懂。
“童子鸡”译成Chicken without sex(还没有性生活的鸡),“红烧狮子头”译成Red burned lion head(红烧狮子脑袋)。
“上面的译法都很可笑,外国人看了会一头雾水。
”陈琳表示,在编制标准译法时,不少菜名都引发了编委会的激烈争议。
陈琳介绍,翻译时,还考虑中国文化、国家政策法律、民族问题等。
“东坡肘子、宫保鸡丁,翻译时,把历史人名保留了下来;乞丐鸡直接翻译,保留了一个故事;麻婆豆腐不能翻译成‘麻脸老太太做的豆腐’,这对妇女不尊重。
”他称。

“中国菜名是我们文化中非常复杂的一个部分,我们必须以长短适中的英文向外国来宾传达出基本意思。”主持讨论稿制订工作的北京联合大学旅游学院副院长冯冬明说。
名目繁多的中国菜名该怎么翻译?在讨论稿中,针对2753种菜名,专家们进行了相对的整理。
首先是中国菜中以主料开头的菜名归为一类,比如“白灵菇扣鸭掌”就直接采用蘑菇和鸭脚,中间以连词连接,而像“冰梅凉瓜”则把菜中的主要配料苦瓜和杨梅汁直接翻译,也用连词连接。

近日,一份《中文菜名英文译法》讨论稿正式由北京市旅游局对外公布,此稿初步确定了2753条菜单及酒水的英文译法,并征求市民建议。

官方发布2158道中餐饭菜英文译名
四喜丸子被译成Four glad meat balls(四个高兴的肉团),木须肉被翻成Wood mustache meat(木头胡子肉),醉蟹成了Drunk crab(喝高了的螃蟹)……这些让人忍俊不禁的中餐英语菜名可能从北京市餐馆的菜单上消失。
北京市外办和市民讲外语办公室近日联合出版的《美食译苑——中文菜单英文译法》,为2158道中餐饭菜“正名”。
正名中餐菜名将统一规范随着国际化程度不断提高,北京市越来越多的餐馆开始提供英文或中英文对照菜单。
但中餐菜名一直没有规范的翻译方法,很多餐馆老板将中文菜名直译成英文,闹出不少笑话。
一家餐馆曾将火爆腰花直接译成Pork flower(猪肉花),弄得外国食客一头雾水。
“中餐菜名,不仅包含了原材料的信息,还糅合了很多文化、历史事件、人名等,形成了独特的命名方式。
”市外办有关负责人说,很多餐馆饭店的英文菜单千奇百怪,不仅外国人看不懂,连熟悉“中式英语”的国内英语老师也云里雾里。
新出版的《美食译苑》基本涵盖了八大菜系的主流菜品,从家常菜到各式大餐菜品都被收入并翻译成外国人能看懂的英文名称。
市外办有关负责人表示,北京市餐馆可以参照书中标准译法印制菜单,但不会强制推行。
释疑童子鸡为啥译“春鸡”中餐菜品琳琅满目,很多菜名也有着独特的来源。
在编制标准译法时,不少菜名都引发了编委会、专家团队内部激烈的争议。
此前曾被翻译成Chicken without sex(还没有性生活的鸡)的童子鸡此次被正名为Springchicken(直译为春鸡),引发了网友热议。
北京外国语大学教授陈琳告诉记者,将童子鸡的英文名称定为Spring chicken是符合中英文语言特征的。
童子鸡的中文含义是没有交配的小鸡,而英语中一般用春、夏、秋、冬来形容小动物的年龄特征,初生到性成熟前的鸡一般用Spring chicken来表示。
陈琳说,红烧狮子头在标准译法中被称为Braised pork ball in brown sauce,而不能译成Red burned lionhead(红烧狮子脑袋)。

美食译苑——中文菜单英文译法(官方全套完整版)中西餐终于有了统一翻译标准。
昨日,北京市政府外事办消息,新出版的《美食译苑——中文菜单英文译法》共规范了3102个中西餐饮食名称,其中包括2158个中餐,并向北京市各大餐馆推广。
《美食译苑——中文菜单英文译法》共分三章,分别对中餐、西餐、饮品进行了标准的英文翻译,其中中餐部分细化到八大菜系,包括鲁菜、川菜、闽菜等特色饭菜的介绍和重点翻译。
此次参加翻译的专家不仅有北京外国语大学、清华大学、北京大学等的教授,还邀请了外交部翻译专家、英籍专家、驻外大使等人。
翻译团队带头人、北京外国语大学教授陈琳表示,翻译力争让完全不懂中华文化的外国宾客一眼就能看懂。
“童子鸡”译成Chicken without sex(还没有性生活的鸡),“红烧狮子头”译成Red burned lion head(红烧狮子脑袋)。
“上面的译法都很可笑,外国人看了会一头雾水。
”陈琳表示,在编制标准译法时,不少菜名都引发了编委会的激烈争议。
陈琳介绍,翻译时,还考虑中国文化、国家政策法律、民族问题等。
“东坡肘子、宫保鸡丁,翻译时,把历史人名保留了下来;乞丐鸡直接翻译,保留了一个故事;麻婆豆腐不能翻译成‘麻脸老太太做的豆腐’,这对妇女不尊重。
”他称。

《中文菜单英文译法》北京市人民政府外事办公室北京市商务局二〇〇七年十二月前言2008年北京奥运会不仅是世界性的体育盛会,也是向世界展示中国文化和首都形象的重要契机。
餐饮服务在奥运会的整体运行中占有重要位置,北京作为中国的首都,荟萃了中华几千年的饮食精华,保证餐饮服务质量,满足服务需求,是实现“有特色、高水平”北京奥运会、残奥会目标的基础之一。
菜单作为餐饮行业展示对外形象和中华饮食文化的窗口,是服务人员与顾客交流沟通的桥梁,规范中文菜单英文译法具有十分重要的意义。
为此,北京市相关部门编制了《中文菜单英文译法》一书。
《中文菜单英文译法》不仅是餐饮行业语言交流的工具,也是传播中华饮食文化让世界了解中国的载体,是加深中外人民友谊的桥梁与纽带。
这本书在为迎接奥运嘉宾提供帮助的同时,也将对北京市中文菜单使用统一规范的英文译法起到指导作用。
