走进海南特色小吃高二(6)班黄晓儒海南由于地处独特的地理环境,四面环海,是我国少有的热带区域,可供烹饪的原料极为丰富,尤其是生猛海鲜、时鲜水果应有尽有。

正如明朝一代文豪丘浚所说,海南“所生之品非一,可食之物孔多,兼中外之所产,备南北之所有”。

海南最具特色的风味小吃,流传历史久远,在海南岛北部的海,市、琼山市、定安县和澄迈县的市镇居民中食用比较普遍,而且是节日喜庆必备的象在吉祥长寿的珍品。

如海南粉、抱罗粉、琼南伊府面、陵水酸粉、海南煎粽、东山煎饼、锦山煎堆、燕粑、鸡屎藤粑籽、万宁糯米卷、甘薯汤丸、椰子盅、黎族竹筒饭等,都在民间广为流传。

说起海南传统小吃的特色,可概括两点:一是,海南传统小吃离不开当地特产;二是,制作技艺是海南特色。

比如海南的粽子是用新鲜的粽子叶,而广东就是多用竹子叶。

澄迈县是海南省北部的一个古县,位于海南岛北部。

澄迈是海南人均寿命最高的县之一,人均寿命高达75.3 岁,超过全国平均水平3.3岁。

2009年3月份,澄迈县正式向中国老年学学会申报“中国长寿之乡”。

澄迈县北靠琼州海峡,海岸线全长89.8公里(含内湾线)。

沿海海边风光猗丽,沙白水清,环境保护完好,是开辟海边旅游度假景点的黄金地带。

在澄迈-一些地方,在大年二十九下午就开始宰猪,往往是几户人家合杀一头。

三十那天,就开始用猪肉、内脏、饭团等祭拜“公祖”,求”公祖”保佑全家身体健康,出入平安,五谷丰登,六畜兴旺。

如果是在年头已许愿的,要在那天还愿。

而这个过程就称为“围炉”。

“围炉” 结束后才能动手杀鸡鸭等。

一到半夜凌晨12点,家家都在摆祖先香炉灵位的正厅里,摆上两小堆刮去表皮的小块甘蔗,-一个柚子,三个桔子,及猪内脏等,然后点上香烛,燃放鞭炮迎接新年。

这个过程叫“上香”。

上香后,大人开始做新年和第-顿饭,叫上全家人吃。

第- -碗饭必须要吃完,另外必须要盛第二次饭,多少不论,能吃多少就盛多少。

而与澄迈相邻的临高,把除夕晚上全家人吃饭称为”围炉”(这其实就是通常所说的团圆饭、年夜饭)。

“ 围炉”后,大人就叫小孩子穿上新衣服袜子睡觉,这叫“睡福”。

睡时间越长就越幸福。

到了上香时间,全家人醒来,儿女给父母、晚辈给长辈拜年,后者则给前者红包。

上香结束后, .全家人吃饭,只能吃素菜不能吃荤菜,如芹菜、青菜、大蒜、扁豆、豆腐等,做菜时只能用花生油炒,要过大年初一中午21312点后才能吃鸡肉。

吃完饭就睡觉,- -直睡到大年初一.上午9点多或更长时间。

反正初一不能去串门门]和拜年。

在拜年时间的选择.上,各个地方不一样。

比如说临高,.从大年初二就开始拜年。

一般首先先去是最重要的人家,如女儿女婿回娘家、下级去上级家、晚辈去长辈家等。

去的时候要买柑桔、鞭炮,寓意大吉大利。

见面高喊“恭喜”,然后燃放鞭炮,寓意岁岁平安。

从初二到十五,只要听到鞭炮响,就知道是谁家又有人来拜年了。

海南粉源始于福建闽南。相传明末有一位 陈姓的住户迁居澄迈老城,以加工米粉为 业。由于生意好,拜师学艺者众多,海南 粉便遍布全岛。《正德琼台志》记载,当 时全岛共有121个较大的墟市,都设有海 南粉加工作坊和小摊。我们俗称的海南粉 也叫海口腌粉。

海南粉:粗粉和细粉
海南粉有两种:一种是粗粉,一种是细粉。 一般来说,海南粉还包括灵山粗粉(即抱 罗粉),陵水酸粉,澄迈粉,加积牛腩粉等等。 粗粉的配料比较简单,只在粗粉中加进滚 热的酸菜牛肉汤,撒少许虾酱,嫩椒、葱 花、爆花生米等即成,叫做“粗粉汤”。 而细粉则比较讲究,要用多种配料、味料 和芡汁加以搅拌腌着吃,叫做“腌粉”。 海南粉通常指的就是这类“腌粉”。
▪ 常见清补凉的用料有花生、红豆、绿豆、 通心粉、新鲜椰肉、红枣、西瓜粒、菠 萝粒、鹌鹑蛋、凉粉块、珍珠、薏米、 芋头等。

澄迈东部靠近海口之处有一座小镇叫白莲镇, 那儿有着许多白莲鹅,野外散养的鹅,俗 称白莲鹅。白莲鹅以肉质紧绷,香浓可口 而荣登海南八大名菜榜单之列。
以放牧采食青草为主,辅以谷物、番薯等传 统的农家饲料,经过长期的自然驯化,形 成具有独特地方特征的家禽。
四、椰丝糯米粑,瑞溪牛肉干
椰丝糯米粑
椰丝糯米粑是海南常见的风味小吃,是澄 迈节日喜庆必备的待客美食。主料是用糯 米粉做皮,填以新鲜椰肉丝、芝麻、碾碎 的炒花生、白糖等配成的馅,以野菠萝叶 包成5厘米左右大小的圆粑,蒸熟趁热吃。 此粑糍而不腻,清甜可口,风味独具。

❖ 有文人解读白莲鹅之名:白,乃纯净也;莲,乃出淤泥而 不染者也;鹅,左为我,右为鸟,我欲飞仙,称鹅也。小 小的白莲鹅,竟所蕴涵此等意境。
❖ 民间自古就有“喝鹅汤,吃鹅肉,一年四季不咳嗽”的说 法,《本草纲目》中也有记载:“鹅肉,有甘平无毒,利 五脏,解五脏毒,止消渴,补气之功效。” 由此证明鹅 肉可补阴益气、暖胃开津、祛风防湿,所以多吃鹅肉对人 体健康十分有利。

腌粉是海南粉的代表。腌粉 以腌技见长,一碗粉要用10 余种特殊佐料腌制。吃后再 加上一勺用海螺煮的海螺清 汤,更是鲜香无比。腌粉味 道首推澄迈 。

▪ 清补凉,顾名思义,“清”是“清火”, “补”是“补充”,“凉”则是“凉爽”了, 综合起来,可以理解为“清火消暑,补充营
养,感受凉意”海南的清补凉不但可以降 火而且甘甜爽口。原料丰富,少则十几 种,多则二十种,多为就地取材,新鲜 可口。
瑞溪牛肉干的特点是肉脆味美,香甜 适口。细啃慢嚼,津津有味,真不愧 为下酒的上乘食料。
五、桥头沙土富硒地瓜,金江酸菜
金江酸菜
酸菜是南北方都有的。但金江酸菜又有 别于南北方的酸味。它的原料乃是一种 与茎食萝卜同科的大叶菜,当地人称为 “六帮菜”或“六卜菜”。又因制作时 只取其幼嫩的苗秧,故这种专门用来制 作大茂酸菜的菜秧便被村里人称为“菜 仔”。
食法
❖在海南食用白莲鹅多以白切 为主,如佐以杂锦酱、辣椒 酱、蒜粒、生抽等蘸料,再 挤些海南独特的青橘汁。其 他烹饪方法,如以白莲鹅为 主料,制作出香芋白莲鹅、 福山咖啡白莲鹅、蜜汁白莲 鹅、多彩白莲鹅、孔雀开屏 白莲鹅等特色美食。
永发乳羊
• 来自海口,澄迈,定安交界的东山火山 岩地区 。因羊放养地区灌木丛生,如 此自然环境下生产的羊肉,无膻且肉质 鲜嫩。
无核荔枝是澄迈特有产品,果肉晶莹,汁
多肉多,清甜不上火。
无核荔枝具有色、香、味皆美的特点,是 荔枝中的精品。与普通荔枝相比,无核荔 枝果肉凝脂、晶莹清脆、完全无渣,吃起 来比普通荔枝明显要甜。
福橙
特点:果大、皮簿、汁多、硒含量高、风味甜酸、 特别适口。被评为“中国十大名橙”。2008年1 月,福橙被国家有关部门正式选定为国宴果品, 澄迈县也因此被授予“中国福橙之乡”。

海南粉是用大米、番茨粉为原料制 成米粉,加上老抽、蒜泥、花生油、 或芝麻油、煮熟的黑豆芽、牛肉丝、 炸尤鱼丝、油炸花生米、炒芝麻仁 末、脆炸面片、碎香菜 、竹笋 及酸 菜等辅料,拌制而成。
