徽州毛豆腐Huizhou Mao tofu
Mao tofu is a traditional special dishes in Huangshan city area and known as a vegetarian dishes of Anhui in Chinese and foreign countries. It is customarily called the Huizhou Mao tofu. Huizhou Mao tofu, also called the mould tofu, is a kind of mould products whose surface has a layer of white fuzz. Its main making method is to cut the tofu into squares, make it ferment to grow a layer of white fuzz and cook it with onion, ginger, monosodium glutamate, sugar,salt, broth and soy sauce after frying it. After doing these steps, it is basically made successfully. The last step is to add the chili sauce on it when it is served in the table. It will look fresh and refreshing, fragrant and attractive. The most important point is that it tastes very delicious stimulates your appetite.
Tofu is high in protein and its proportion is close to the human body needs, so it has high nutritional value. It has the function of reducing blood lipids,protecting the vascular cells and preventing the cardiovascular disease.In addition, tofu is also beneficial to the aftercare, weight loss and delicate skin.
There is a legend about the origin of Mao tofu. It was said that one time Zhu Yuanzhang defeated in Huizhou and fled to Xiuning area, hungry and tough. So he ordered the entourages to look for food. One of the entourages searched out a
few pieces of tofu which the displaced people hide in here. Although it has been fermented and had a layer of white fuzz, the entourage had to baked the tofu on coals and handed to Zhu Yuanzhang because there is nothing to eat but it. Unexpectfully, the tofu tasted very delicious and Zhu Yuanzhang was very happy. After snatching a victory out of defeat, Zhu Yuanzhang ordered the army cookers make the Mao tofu to reward soldiers as refreshments. Since then, Mao tofu was handed
down in Huizhou.

关于毛豆腐的来历,这里有个传说,相传,朱元璋一次兵败徽州,逃至休宁一带,腹中饥饿难熬,命随从四处寻找食物,一随从草堆中搜寻出逃难百姓藏在此处的几块豆腐,但已发酵长毛,因别无它物,随从只得将此豆腐放在炭火上烤熟给朱元璋吃。
不料豆腐味道十分鲜美,朱元璋吃了非常高兴。
转败为胜后,下令随军厨师制作毛豆腐犒赏三军,毛豆腐遂在徽州流传下来。
在徽州旅游,很多景点都能看到徽州毛豆腐的身影。
所以作为大众小吃,购买起来十分方便。
