奥运期间中式菜单的英文名“麻婆豆腐”翻译成“Bean curd made by a pock-marked woman”(满脸雀斑的女人制作的豆腐),“夫妻肺片”翻译成“Husband and Wife's lung slice”(丈夫和妻子的肺切片),“童子鸡”翻译成“Chicken Without Sexual Life”(没有过性生活的鸡)……这些让中外食客啼笑皆非、莫名其妙的菜单的翻译,将在北京奥运会期间乃至以后渐渐消失,代之以最新统一的翻译方法。
记者看到,新的菜单中,有些采取了音译加描绘性说明的方式。
如麻婆豆腐被翻译成了Mapo Tofu (Stir-Fried Tofu in Hot Sauce),四喜丸子依然是“Four-Joy Meatballs”(四个高兴的肉团),不过特别加了补充说明“Meat Balls Braised with Brown Sauce”。
有的采取了意译,说明了做法,如夫妻肺片的英文翻译统一为Pork Lungs in Chili Sauce,清蒸童子鸡为Steamed Spring Chicken。

一、功能对等理论
(一)功能对等理论的概况
尤金·奈达提出了动态对等理论。谭载喜教授的《奈达论翻译》(1984)和《跨语交际》(1993),系统的介绍了奈达在翻译理论方面的著作。[1]1964年,奈达在专著《翻译科学探索》(Towards a Science of Translating) 中提出了动态对等理论;1969 年,奈达在《翻译理论与实践》(The Theory and practice of Translation)一书中,解释动态对等,即“从语义到语体,在接受语中,用最切近的自然对等语,再现源发语的信息。在动态对等的翻译中,译者着眼于原文的意义和精神,而不拘泥于原文的语言结构。”[2] 这也是检验译文效果的标准之一。动态对等包括以下四个方面:词汇对等、句法对等、篇章对等和文体对等。20世纪70年代,奈达将“动态对等”改为了“功能对等”,进一步完善了功能对等理论的内容,提出了在确保原文内容信息恰当传递的同时,要注意文体风格等方面的对等,还要兼顾再现源语文化和消除文化差异的问题。

[1] 通常以牛头皮、牛心、牛舌、牛肚、牛肉为主料,进行卤制,而后切片。
再配以辣椒油、花椒面等辅料制成红油浇在上面。
夫妻肺片,制作精细,色泽美观,质嫩味鲜,麻辣浓香,非常适口。
菜品历史相传,清朝末年,成都街头巷尾有许多挑担、提篮叫卖凉拌肺片的小贩。
用成本低廉的牛杂碎边角料,经清洗、卤煮后切片,佐以酱油、红油、辣椒、花椒面、芝麻面等拌食,风味别致,价廉物美,特别受到拉黄包车、脚夫和穷苦学生们的喜食。
20世纪30年代,成都人郭朝华和妻子一道以制售凉拌肺片为业,他们夫妻俩亲自操作,走街串巷,提篮叫卖。
由于选用牛肉铺的边角料做食材,价格便宜、味道好,颇受欢迎。
人们就将这种凉拌牛杂称为“夫妻废片”。
因为“废片”二字不好听,再加上食材中有牛肺片,便取‘废’的谐音‘肺’,改名为“夫妻肺片”。
后来,他们发现牛肺的口感不好,便取消了牛肺。
1933年,郭氏夫妇在成都半边桥附近(今人民公园后门右侧)设店出售,店名正式取名为“夫妻肺片”,牌匾为金字黑底,由书法家赵蕴玉亲题。
后几经变迁,该店迁至闹市街的提督西街,扩大了经营规模,增添了牛肉面等品种,食客不光是可以品尝肺片,还有面食充饥。
中华人民共和国成立后,在公私合营时期,郭氏夫妇的夫妻肺片店和其他传统的餐饮名店一样,并入国营单位。
