酶也是一类蛋白质,有的酶需要金属离子参与才能完成其在生物体内的催化功能,这类酶称为金属酶金属酶也属于金属蛋白质的范畴。但是从功能说,金属酶又不能等同于金属蛋白质,它是金属蛋白质中的一部分,还有一部分金属蛋白质,它们在生物体内不是起催化作用,而是承担其它方面的生物功能。近年来,金属酶的研究应用越来越多,像超氧化物歧化酶、抗氧化酶等等。酶作为一种特殊的蛋白质类催化剂,有着严格的使用条件,不能高温高压,不能过酸过碱。我们还必须知道酶的三大特性:温和性(温度、PH),高效性,专一性
