摘 要
我国的芒果加工业已经发展多年并日益成熟。然而伴随着科学技术的日新月异,以及 我国人民生活水平和要求的不断提高,发展中的问题仍旧存在于我国的芒果加工业当中: 第一、产品类别少,多样性程度低;第二、原料的利用率低。 所以,本次的工厂设计将围绕着以上两点进行展开。 综合考虑了经济、交通、加工原料与产品性质以及环境问题等一系列因素和可行性, 本次的工厂设计定于广东省湛江市的雷州半岛郊区作为工厂选址。该地区由于受北部湾海 洋季风的影响,小气候高温干旱少雾,日照时间长,种植芒果得天独厚。与此同时,该地 区的地价与劳动力价格也较为适宜[1]。 综合考虑了产品的丰富度、芒果原材料的利用率以及各种产品的市场需求,本次的工 厂设计计划生产烘焙芒果果酱、芒果原浆、糖水芒果罐头、速冻芒果块、以及芒果皮粉共 5 种产品。 结合国内外的科技条件,选择合理的产品方案、高效稳定的工艺流程以及生产设备。 本设计根据国家标准与相关要求,合理分析并列举了生产车间建设、布置的各项要求,并 根据这些要求进行了车间平面图的绘制[2]。同时,针对食品工厂可能存在的环境问题进行 了详细的分析并提出解决方案,使本设计符合国家的“绿色”要求。 在经济上,本设计结合了现今社会市场的状况进行了详尽的分析,从各项资金的投资、 消耗以及收益进行分析,确定本厂的设计具有一定的经济效益,符合未来的发展要求。 关键词:芒果;工厂设计;产品多样性;原料利用率;

Abstract
Mango processing industry in China has been developing for many years and is becoming more and more mature. However, along with progress of science and technology, as well as the continuous improvement of people's living standards and requirements in China, problems still exist in our country in the development of mango processing industry:First, the product category is little, low degree of diversity;Second, low utilization rate of raw materials. So, the plant design will be around the above two points. Considering the economy, transportation, processing raw materials and products properties and a series of factors such as environmental problems and feasibility of the plant design is due to Guangdong Zhanjiang Leizhou peninsula suburbs as a factory location. The region due to the effect of the North gulf Marine monsoon, climate temperature dry fog, sunshine time is long, planting mango.At the same time, the region's land and labor price is more appropriate. Considering the richness and mango, the utilization ratio of raw materials of products and market demand of various products, the factory design plan production baking mango jam, mango protoplasmic, canned mangoes, frozen mango, mango skin powder and a total of 5 kinds of products. Combining with domestic and foreign science and technology condition, choose the reasonable product solutions, highly efficient and stable process flow and production equipment.This design according to the national institute of standards and related requirements, reasonable analysis and lists the requirements of the production workshop construction, layout, and has carried on the workshop floor plan drawing according to these requirements.Possible environmental problems at the same time, in view of the food factory has carried on the detailed analysis and put forward solutions, make the "green" requirements of this design accord with a country. Economically, this design combines the present situation has carried on the detailed analysis of the social market, from the capital investment, consumption and income analysis, determine the design of our factory has a certain economic benefits, conform to the requirements of the future development.
