西洋菜又名豆瓣菜、水芹菜、水田芥,是十字花科多年生蔬菜。
原产欧洲。

西洋菜以其幼嫩茎叶供食用,质地脆嫩,色泽浓绿青翠,除用米炒食、涮食外,主要作汤料,具有去油解腻作用。
食材
主料:
西洋菜750g
猪骨
蜜枣2粒
盐适量
步骤
1.西洋菜摘洗干净,沥干水。
2.猪骨洗干净斩块。
3.汤锅内加入10碗清水,加入蜜枣。
4.加入猪骨,盖上盖子开火,大火烧沸后改中火先将猪骨煲20分钟。
5.20分钟后加入西洋菜继续煲45分钟关火。
6.加入盐调味即可。
小贴士:用西洋菜煲汤一定要多放些西洋菜,要不然啊,这汤没味!。

猪蹄本身富含蛋白质,有滋润肌肤的功效哦!银耳沙果汤材料:银耳、沙果将沙果洗净,银耳泡发好,倒入砂锅内加水同煲,大火烧开后小火慢炖,直到沙果皮裂开,然后在出锅前洒上鼠尾草即可。
长期食用银耳能润肤,消除黄褐斑。
银耳膳食纤维丰富,能够促进肠胃蠕动,有减肥的效果哦!但是要记得银耳不要隔夜吃,易食物中毒。
牛蒡排骨汤材料:牛蒡300g 小排200g 白萝卜1个中等大小,胡萝卜1根材料切块备用,排骨飞水后将材料放入砂锅内同煲,牛蒡含有丰富的纤维素,能健胃整肠、滋润肌肤。
乌鸡山药汤材料:乌鸡半只,山药200g,党参30g山药去皮切块,乌鸡切块后飞水,将材料放入砂锅中加水同煲,炖至鸡肉软烂即可。
山药中的营养成分薯蓣皂,是合成女性荷尔蒙的先驱物质,有滋阴补阳、增强新陈代谢的功效。
板栗蔬菜龙骨汤材料:瘦肉、八角、料酒、板栗、南瓜、玉米、玉米须、胡萝卜、西红柿、盐少许瘦肉切块后飞水,将材料放入砂锅中加水同煲,炖至肉类酥烂即可。

”这个师傅是我以前在餐馆打工时认识的,所以,他推介我做这款汤,于是,拿回来这些烧猪手,买些西洋菜回来,按师傅说的,做了这款“烧猪手西洋菜汤”。
哈,真的不错呢这款汤汤味浓烈又有着西洋菜的清香。

烧猪手

1.将烧猪手斩块。

原料:猪蹄1个,猪尾骨、胡萝卜各100克,罗汉果2个,枸杞子10克。
调料:姜块10克,精盐、味精、料酒各2小匙,胡椒粉1大匙。
罗汉果煲猪蹄的做法
1、猪蹄刮洗干净,剁成大块;猪尾骨洗净,切成小块;罗汉果洗净、拍破;胡萝卜分别去皮、洗净,均切成块。
2、瓦煲放入猪蹄、猪尾骨、罗汉果、料酒、姜块,加入适量清水烧开,转小火煲2小时。
3、再放入胡萝卜块、枸杞子煲约40分钟,加入精盐、味精、胡椒粉调味即成。

骨头

罗汉果半个

步骤
1.将买回来的骨头清洗干净之后用水烧开去血污,然后再冲洗干净。
2.准备罗汉果和蜜枣。
3.将西洋菜清洗干净。
4.将骨头熬到变乳白之后放入半个罗汉果和一个蜜
枣再烧开半小时。
5.当罗汉果和蜜枣烧出味道之后放入西洋菜。
6.喜欢爽口的可以将西洋菜煮到断生即可,如果想吃西洋菜软的可以多煮些时间。

一、西洋菜罗汉果猪蹄汤去湿气效果好
材料:猪蹄肉500克,罗汉果半个,西洋菜700克,南杏仁60克。
做法:
1、猪蹄肉洗净,干水,罗汉果洗净,西洋菜洗净,摘短度,南杏仁用开水煲,去衣。
2、把罗汉果、南杏仁放入锅内,加清水适量,武火煮沸后,放入猪蹄肉、西洋菜,再煮沸后,文火煲2~3小时,调味供用。
功效:清热润肺,化痰止咳。
肺热之燥咳,咽干口燥,或咽喉干痛,咳声嘶哑,或燥热便秘等。
亦可用于支气管炎属肺燥有热者。
2、霸王花煲猪展汤
功效:木耳加丝瓜能清除热毒与洁肤、养血滋阴而润肤。
材料:霸王花2两,猪展肉12两,蜜枣4个,盐少许,清水10碗。
做法:1、猪展肉原块洗净,霸王花浸软洗净,蜜枣去核。
2、把蜜枣和霸王花同放企身瓦煲内,加清水,旺火烧滚,下猪展肉滚约二十分钟,改中火煲约半小时,以文火煲至汤水余
下四至五碗左右,以盐调味。
功效:清热除痰、止咳。
三、去湿气的汤还有——萝卜莲子猪舌汤
材料:萝卜750克、莲子50克、芡实25克、蜜枣3枚、猪舌500克、猪骨750克。
做法:
1、萝卜连皮洗净,斜向切成中块;莲子、芡实、蜜枣去核洗净,用清水稍浸泡;
2、猪舌反复刮洗干净,切成大块,连同猪骨用开水稍煮沸片刻,去掉血水,猪骨飞水后则用刀背敲裂;
3、把所有材料一起放进煲内煲2个半小时,放适量食盐和少量油调味便可。
此量可供3~4人用。

西洋菜煲羅漢果
功效:治喉乾聲沙
材料:
1.西洋菜一斤
2.瘦肉兩斤
3.羅漢果半個
4.南北杏少許
調味料:鹽少許
製法:
1.由於西洋菜是水生蔬菜類,易藏沙泥及菜蟲,所以必須徹底洗淨。
如浸菜時加入一至兩
茶匙食鹽,則藏於菜梗的污穢很容易會被洗淨。
羅漢果開邊,略為沖洗備用。
2.先將瘦肉出水,煲滾六湯碗水後,將瘦肉、羅漢果及南北杏放入,煲約一小時後再將西
洋菜放入,再煲一個半小時,放鹽調味。
備註:
羅漢果:原產地廣西,一年四季都有得賣;要揀靚羅漢果,首先睇睇色澤要光亮,黑得要均勻;另外最好將羅漢果輕輕力由距離檯面一、二吋的地方放下,如果好似「乒乓波」似的會「彈得起」,証明不是「空心」亦即上品。

做法1、首先将罗汉果洗净,随后放入碗中进行打碎备用。
2、接着将枇杷叶洗净,放入清水中进行浸泡30分钟。
3、随后将猪瘦肉的血水洗净,放入白开水中进行焯烫,捞起过凉水清洗,随后切块备用。
4、这时锅中加入适量的清水进行煮沸,将罗汉果、枇杷叶、猪瘦肉这些食材一一放入锅中,大火熬煮。
5、煮沸之后改成小火继续煮三个小时,最后加入食盐调味,搅拌均匀就可以吃了。

三、罗汉果和什么煲汤效果好罗汉果白菜干猪肺汤材料:猪肺1具,罗汉果2个,白菜干100克,姜25克,绍酒25克,水约3000克。
猪肺洗净,切小块,飞水备用。
白菜干冷水浸发,洗净切段,罗汉果敲碎,同放在沙锅内加水烧煮。
热锅下油姜块猪肺爆炒,赞酒,稍微炒香即可,全放进沙锅同煮。
这一步的目的是除腥驱寒。
水沸后调小火煲90分钟。
这道食谱中白菜具有滋阴清热解毒的作用,猪肺可以起到润肤的作用,加上罗汉果,是对于出现的咽喉炎,声音嘶哑的情况有改善的作用,还能有清肺热的作用。
罗汉果甜藕汤豆瓣菜100克,罗汉果30克,莲藕150克,山药(干)20克,盐3克,味精2克。
西洋菜(豆瓣菜)只取嫩叶心,洗净;罗汉果拍碎,用纱布包好,放入清水中熬15分钟;淮山(山药)和老藕分别去皮,洗净切片;浸稀盐水5分钟后捞起放入汤汁中;把熬好的罗汉果汤放入淮山,一起煮二十分钟,然后放入西洋菜心,放入食盐和味精煮开即可。

现在是西洋菜大量上市的季节了,广州儿童歌谣唱到:西洋菜,冇人爱,留俾医生做药材。
这就从另一个侧面反映了西洋菜的营养价值了。
西洋菜营养丰富,含有多种氨基酸和维生素A.B.D等,用来煲汤的话有润肺降燥的功效。
食材
主料:
猪脊骨0适量
腊鸭头
红萝卜0适量
西洋菜
罗汉果0适量
无花果0适量
步骤西洋菜漂洗干净,先将猪骨放煲里先煲,一般的做法是将猪骨先飞水以去除猪骨的血污,但我为了最大限度地留住猪骨的营养成分,就把飞水的步骤省了,只须在水将近沸腾的时候把浮在水面上的泡沫去除,也一样达到飞水的效果,然后把西洋菜和其他的材料放入中火煲两个小时放盐调
味即可。
罗汉果西洋菜煲猪踭
罗汉果西洋菜煲猪踭西洋菜性味甘凉,有清肺润燥的作用,含有多种维生素,是富有营养的清润时蔬。
且味道特殊清香,煲出来的汤水十分清甜,是广受欢迎的煲汤食材。
今天用稍肥的猪踭肉搭配“瘦物”西洋菜,相得益彰,汤水不油不寡,再加半个罗汉果,更增清热止咳、凉血润肠之效。
3-4人份做法:1.罗汉果洗净,西洋菜洗净,摘好;2.猪踭肉洗净,切片,汆水捞起;3.煮沸清水,放入所有材料,武火煮沸,转小火煲一个半小时,下盐调味即可品尝。
功效:清热润燥,滋养肺阴,化痰止咳。
适用于咽喉干痛、燥热便秘等,也可用于百日咳、支气管炎属肺燥有热者。
●美食科学堂猪踭猪踭是广东人对猪手(猪脚)以上部位的叫法,肥中带瘦,多用来白切或煲汤,口感肥而不腻,蘸豉油吃,咸香可口。
猪踭肉有补脾气、润肠胃、生津液的功能。
其实猪身上的不同部位,肉质和口感各有不同,烹调方法也随之不同,像猪踭就很适宜白切,不肥不柴,稍带“嚼头”;五花肉就很适宜红烧或炖煮。
一般按照烹调的需要猪肉有以下部位:1、里脊肉(广东人叫梅肉):是脊骨下面一条与大排骨相连的瘦肉。
肉中无筋,是猪肉中最嫩的肉,可切片、切丝、切丁、作炸、熘、炒、爆之用最佳。
2、臀尖肉:位于臀部的上面,都是瘦肉,肉质鲜嫩,一般可代替里脊肉,多用于炸、熘、炒。
3、坐臀肉:位于后腿上方,臀尖肉的下方臀部,全为瘦肉,但肉质较老,纤维较长,一般多作为白切肉或回锅肉用。
4、五花肉:为肋条部位肘骨的肉,是一层肥肉,一层瘦肉夹起的,适于红烧、白炖和粉蒸肉等用。
5、夹心肉:位于前腿上部,质老有筋,吸收水分能力较强,适于制馅,制肉丸子。
在这一部位有一排肋骨,叫小排骨,适宜作糖醋排骨,或煮汤。
6、前排肉:又叫上脑肉。
是背部靠近脖子的一块肉,瘦肉夹肥,肉质较嫩,适于作米粉肉、炖肉用。
7、奶脯肉(又叫下五花):在肋骨下面的腹部。
结缔组织多,均为泡泡状,肉质差,多熬油用。
8、弹子肉(广东人叫猪):位于后腿腿上,均为瘦肉,肉质较嫩,可切片,切丁,能代替里脊肉。
西洋菜罗汉果煲排骨
西洋菜泡洗3遍,摘取根部太老太韧的部分,或者这里比较省事的话可以一把切掉底部。

排骨洗净焯水捞起备用,焯洗是为了除去猪骨表面的血污和脏物,如此煲出的汤才清甜。罗汉果也冲洗一下掰成小片,比较好出味。

拿一砂锅,下足够的水,以免途中水干了加水,把所有材料放进去,大火烧烤,中小火煲50分钟,中小火更能使食材的养分充分析出,不要大火以免产生过多的有害物质。煲好后最后再下盐调味即可。
西洋菜罗汉果煲排骨
广东人一般很少会用青菜来煲老火汤,因为菜会褒烂发黄不好看也不好吃。西洋菜是唯一一个特例,煲完汤的西洋菜更佳适合食用,如果炒会比较韧,不太容易嚼烂。
