历史故事 : 抗日战争胜利后,“广合号”重返水口 复业。方文帜之子方富燊继承父业,先将积 压存放了一年多的100多缸腐乳出售。该批 腐乳质量好、保存时间长,闻起来特别醇香 。当时港澳客商通过水路频繁来往开平,而 “广合号”门前就是客运码头,凡路过水口 的旅客大多购买广合腐乳。从此,广合腐乳 开始畅销港澳及东南亚,并随四邑华侨远销 各国。近年来,引进现代经营方式的“广合 腐乳”获得过广东省著名商标、腐乳十强企 业等120多个奖项。
马冈鹅
广东省地方优良鹅种之一。种源于开平 市马冈镇,故名“马冈鹅”,特点是:体 型适中,头、嘴、脚皆乌黑色,羽毛灰黑 色,头大颈粗、胸宽、脚高,皮薄,肉纹 纤细,肉质好,脂肪适中,味道鲜美。另 外,马冈鹅抗病力强,粗食早熟、易长, 产蛋较多,畅销国内外。

在外海镇围美里 的一条巷子里,有一家 “成记面加工场”,至 今仍然保留着传统的外 海面加工方法。年过花 甲的主人成叔说,外海 面的做法是将和好的面 团放在案板上,把一条 约2米长、10厘米粗的 大竹竿的一端插入墙洞 里,打面的师傅一腿骑 跨在大竹竿的另一端, 对面团反复弹压,每弹 压若干次,撒上生粉, 对折面团,再弹压一遍, 如此反复。

在外海镇围美里 的一条巷子里,有一家 “成记面加工场”,至 今仍然保留着传统的外 海面加工方法。年过花 甲的主人成叔说,外海 面的做法是将和好的面 团放在案板上,把一条 约2米长、10厘米粗的 大竹竿的一端插入墙洞 里,打面的师傅一腿骑 跨在大竹竿的另一端, 对面团反复弹压,每弹 压若干次,撒上生粉, 对折面团,再弹压一遍, 如此反复。
第三站
新会·古井
新会,古称冈州,现隶属广东省江门市。地处 珠江三角洲西南部的银洲湖畔、潭江下游。新会气 候温和,土地肥沃,河网密布,物产丰饶,素有 “葵乡”、“水果之乡”、“鱼米之乡”之称。 新会风光绮丽,风景名胜众多,小鸟天堂、 圭峰山国家森林公园海内外闻名。
转“站”新会古井,仿 佛就闻到了一股独特的的香味, 那便是新会古井烧鹅的味道。
烧鹅常用的鹅种是每年春季清明和秋季重阳前后 一个半月的鹅苗,并且要在本地鱼塘长至三、四个月 大,大约7斤重。这种鹅叫“乌鬃鹅”,不受污染, 肉质最好。烧鹅时采用传统的生抽王混砂糖、盐、酒、 蒜茸、五香粉以及其他不得外传的独门秘方等为酱料, 塞入鹅肚内,用绳扎紧摇匀,并以麦糖擦鹅身,用荔 枝柴烧炉。鹅挂在热炉内,炉下置有水之镬接鹅油, 避免把鹅烧焦,以中火烧烤约40分钟便成。此法制作 出来的烧鹅色香味俱全,肉汁多而皮甘香脆,甜中带 咸。
第六站
开平
开平市,隶属于广东 省江门市管辖,地处五邑 侨乡中部,素有“小武汉” 之称,历来是重要商埠和 货物散集地。 而当地的碉楼更是被 列入《世界遗产名录》, 成为中国第35处世界遗产。
五邑人喜食狗肉,尤以开平人为甚。茶楼酒馆常 以“五香狗肉”、“狗肉煲”。“狗肉饭”招徕顾客; 乡下人则以蒸狗为口福。狗肉蛋白质丰富,营养价值 高,有健脾益气,和中壮阳之功,风味独特。 开平人虽喜食狗肉,但禁忌在家里蒸狗,甚至装 过狗肉的器皿都不准放上灶头,认为狗乃污秽之物。 民谚云:“狗不上灶头。”开平人蒸狗,要到村边闲 屋去另起炉灶,这已成为俗例。而且开平人喜欢在夏 至大吃狗肉,已是当地沿袭数百年的传统风俗。 开平狗肉,以振华、龙塘、楼冈等乡镇为佳。振 华狗肉不加别物,取其原味。赤坎等地蒸狗,喜欢放 进油炸过的腐竹、黑豆等,与狗肉同煮,亦别有风味。
七百多年前,新会崖门发生了一场蒙古侵略 中国的宋元大海战。大战结束后,一位在南宋宫 廷里负责制作烧鹅的御厨,带着女儿逃难到银洲 湖西岸的仙洞村。御厨在仙洞村开了一间烧鹅店, 凭着宫廷秘制烧鹅的高超手艺,把鹅烧得色香味独 特,很快便名扬远近数十里,生意特别好。后来 御厨的女儿长大了,嫁到银洲湖东岸的古井,女 儿也把父亲秘制烧鹅的手艺带到了古井。古井烧 鹅由此而起,并代代相传到今天。

看着角洲西南部,有山地、丘陵、 平原、滩涂,土地肥沃,气候温和,物产丰饶,是 珠江三角洲著名的“鱼米之乡”。
来到台山我们继续识饮识 食。说到美食,又怎么能少 得了海味,而台山最著名的 就是川岛镇的海鲜宴。下面 就让我们来尝一尝鲜。
川岛盛产各种海鲜,包括石斑、龙虾、膏蟹、皇 冠螺等数百品种。各种海鲜美味随捞随吃,本地人最 喜欢的一般做法是清蒸,辅以佐料沾食,味道极鲜、 清甜。更加让人心动的是,川岛海鲜价格便宜。 当地渔民长期以来创造出了多种海鲜佳肴:吉列 生蚝、豉椒焗龙虾、荷叶蒸鱼片、姜葱鱼腩煲、白鳝 酸菜、蟹爬九层塔,而最豪华的就要数“渔家海中宝 宴”,巨大的用餐船需要两名服务员才能抬上来,大 船里装满了各种各样的海鲜和特色菜肴。 除了海鲜菜肴,川岛主食和小吃也都与海鲜密切 相关,各种海鲜饭、海鲜粥、海鲜点心都是在大都市 无法品尝到的。
第二站
江海·外海
外海镇位于江门市东部,设有 高新技术产业工业园、台商工业园 等,是投资置业的好地方。 唔使问阿贵都知道,在外海最出名的就是外海 面啦! 以外海面作为卖点的面食档摊在江门真是遍地 开花。外海面之所以做到街知巷闻,皆因其吃起来 爽滑弹牙,入口软、韧、爽、滑,并伴有鲜鸡蛋的 清香,口感十分独特。而做外海面最重要的一道工 序就是和面后用“竹升”压面团来增加面的筋道。
值得一提的是,江门常常会与新会、台山、 开平、恩平、鹤山并称“江门五邑地区”,这些 地区都各自有其特色美食,极大地丰富了江门饮 食文化的内涵和底蕴。
第一站
蓬江·杜阮
杜阮镇地处江门市蓬江区西 部,属珠三角西部丘陵区,是广东 省沿海经济带的工业卫星镇。
来到杜阮,不得不提的就是杜阮凉瓜(苦瓜)。由 于杜阮一带多为沙质土壤,十分适宜种植凉瓜,凉瓜始 种于杜阮一带已有上百年的历史。 杜阮大顶凉瓜特点是瓜型肥大,形似木瓜,平顶粒 粗,肉厚色绿,味微苦而甘,爽脆无渣,质优型美著称, 是其他产地的凉瓜是无可比拟的。 慕名来吃正宗杜阮凉瓜的人不计其数,凡到杜阮游 览的外地人,都以“不吃凉瓜枉此行”为傲。
既然杜阮凉瓜别具特色,大厨们自然不会放过 这一美味原料,于是炮制出自成一格的“凉瓜宴”。 一席上来尽是养眼的翠绿。首先上的是蚝豉黄豆凉 瓜汤,汤中放进了酸菜和排骨一起煲。冰镇凉瓜是 主打菜,入口冰凉透心,清爽多汁,充分突出了杜 阮凉瓜的过人之处。接下来是清爽可口的清炒凉瓜 丝、冶味汁浓的鱼骨焖凉瓜、传统家常的豉汁炒凉 瓜和白灼凉瓜蘸白糖。更有凉瓜做成的糕点。苦中 有甘,回味无穷——这就是杜阮凉瓜的妙处。

恩平
恩平市,位于广东省西南 部,属珠江三角洲区域,是 粤中粤西交汇地。 恩平有三大自然保护区 (七星坑自然保护区、镇海 湾红树林保护区、君子山自 然保护区)、四大森林公园 (鳌峰山、青南湖、河排、 西坑)、四大温泉(金山、 乐园、帝都、锦江)。
来到恩平就一定得尝一尝这里的濑粉。 濑粉是恩平地区的一种独特食品,用大米为原 料制作而成。特别是到了中秋佳节,恩平县北部地 区以濑粉为主食。吃时用开水烫过,兑进上汤,就 成独具一格之濑粉了。在濑粉中兑入白糖烧酒,又 另有风味。还可以辅以烧鹅,是为“烧鹅濑”。
