Tea wear Selection and Use
冲泡器如茶壶、盖碗、冲泡杯等,其质地会影响泡出茶汤的风格。所谓质地,主要是指散热速度,一般而言,密度高者、胎身薄者,散热速度快(即保温效果差);密度低者、胎身厚者,散热速度慢(即保温效果好)。
The brew wear can influence style for brewing tea. As teapot, cover bowl, brewing vessel and so on. The material for tea wear refers to heat dissipation rate, generally speaking, high density, teapot body is thin, heat dissipation rate is fast; the density is lower, teapot body is thick, heat dissipation rate is slower.
散热速度快者,泡出来茶汤的香味较清扬、频率高;散热速度慢者,泡出茶汤的香味较低沉、频率较低。这可拿同一种茶,以不同散热速度的两把壶冲泡,比较茶汤、叶底的香气得知。
The heat dissipation rate is fast. Tea liquid has light taste. Heat dissipation rate is slower; tea liquid can be heavy taste. We can use the same tea, and use different teapot that has heat dissipation rate. Last we can compare aroma with the tea liquid, and tea leaf.
一般说来,瓷器、银器比炻器、石器散热快;炻器、石器又比紫砂茶器散热快。所以泡茶时,若想将某种茶表现得清扬些,就使用散热速度快一点的冲泡器,若想表现得低沉些,就使用散热速度稍慢一点的冲泡器。
Generally speaking, porcelain, and silver has a faster heat dissipation rate than stoneware and rock(stone石器)ware. If we want to make tea light taste, we can use a teapot with a faster heat dissipation rate, if we want to make tea heavy taste, we can also use a teapot with slower heat dissipation rate.
