Fresh, hot, and absolutely perfect!No trip to China is complete without sampling diverse regional noodle dishes. In Lanzhou, we slurped downhand-pulled beef noodles in a rich, hearty broth. The chef stretched and twirled the noodle dough in the air like a jump roper before dropping them into the boiling soup.Down south in Guilin, we tried crispy fried noodles called luosifen that were bathed in a mouth-numbing sauce made with special river snails. It sounds a little weird, but it ended up being surprisingly delicious! These are thousands of life-size claysoldier statues that were buried underground to guard an emperor's tomb over 2,000 years ago! It's incredible to see them all lined up in battle formation. Xi'an also has really good Muslim food because it was an important stop on the ancient Silk Road trade route connecting China to the Middle East.Shanghai is the biggest city in China and it's right on the coast. Shanghai is known for its cosmopolitan vibe and mix of modern and traditional culture. I love visiting the Yu Garden with its classic Chinese architecture and then going to see the ultra-modern skyscrapers like the Oriental Pearl TV Tower.Down in southwest China, there's Chengdu, the capital of Sichuan province. This city is famous for its giant pandas! The Chengdu Research Base lets you view pandas up close eating bamboo and playing. Pandas are just so cute and cuddly. Chengdu is also known for its incredibly spicy Sichuan cuisine. My mouth burns but I can't get enough of dishes like mapo tofu, dandan noodles, and Kung Pao chicken.But my absolute favorite city is probably Guilin. It has the most breathtaking natural scenery I've ever seen! Guilin issurrounded by bright green karst hills and rivers with water so clear you can see right through it. Taking a boat cruise down the Li River and floating under the huge limestone peaks is like something out of a fairy tale. The scenery seriously looks too beautiful to be real!OK, now let me tell you about some of the best foods in China. I'm sure you've had Chinese food like fried rice, dumplings, and noodles before. But the food here is so much better and there are tons of dishes you can't get overseas.First up is Peking duck from Beijing. The duck is fried until the skin is really crispy and then you wrap it in a thin pancake with cucumbers, scallions, and sweet bean sauce. It's my dad's favorite and smells amazing! And you can't leave Beijing without trying a jianbing, which is kind of like a crepe with an egg cooked right into it along with crispy wontons and lots of savory sauces.In the south they eat a lot of dim sum, which are small plates of dumplings, buns, and other bite-sized dishes. My favorite is char siu bao, which are soft steamed buns filled with barbecued pork. So delicious! Guangzhou is one of the best places for authentic dim sum. And you have to try chicken feet if you're feeling adventurous!Up in Sichuan, the food is incredibly spicy but so flavorful. I told you about their famous dishes like mapo tofu already. But they also have an amazing hot pot where you cook your own meats and veggies in a huge pot of boiling chili oil broth right at your table. Just typing about it is making my mouth water!Another one of my favorite dishes is xiaolongbao from Shanghai. These are soup dumplings with a hot broth inside. You have to carefully pick them up with your chopsticks, make a tiny hole, slurp out the broth, then eat the dumpling. It's an art to eat them without making a mess! The broth is so rich and savory.And lastly, I have to mention the mouth-watering street foods you can find all over China. My favorites are jianbing (like I mentioned, a type of crepe), sugar candies shaped like little animals or toys, stinky but crazy addictive tofu, skewers of candied strawberries, and eggs cooked into a thin omelet with lots of yummy fillings and sauces.Whew, I could talk about Chinese food forever!
