第一章:绪论***.食品添加剂(Food additives) —是指“为改善食品品质和色、香、味,以及为防腐和加工工艺的需要而加入食品中的化学合成或者天然物质”。

Food additives are defined as chemically synthesized or natural substances which are added to foods for purposes of improving the quality, color, flavor of the foods or for the need of preservation or processing.***营养强化剂(Nutrition enhancers) —为增强营养成分而加入食品中的天然的或者人工合成的属于天然营养素范围的食品添加剂。

食品添加剂的定义 按《中华人民共和国食品卫生法》的规定, 是指为改善食品品质和色、香、味以及防腐和 加工工艺的需要而加入食品中的化学合成或天 然物质。 According to sanitary law, food additives is the natural or man-made component not only to improve the quality , color , smelling and taste , but also to antisepsis and manufacture.





5’-呈味核苷酸二钠:白色至米黄色结晶或粉末,无臭,味鲜,与谷氨酸钠 合用有显著的协同作用,鲜度大增。溶于水,微溶于乙醇和乙醚。5’尿苷 酸二钠和5’胞苷酸二钠的呈味力较弱。 单、双甘油脂肪酸酯:又称原甘油脂肪酸酯。饱和或不饱和脂肪酸的聚甘 油酯类。可作润滑剂、塑化剂、涂料及清漆之展色剂、胶凝剂,尿烷的中 间体、黏着剂、联结剂、纺织纤维的润湿剂、表面活性剂、食品分散剂及 乳化剂、药物、化妆品。甘油脂肪酸酯是一种高效非离子表面活性剂,具 有亲水亲油平衡功效,可以被人体利用,可与酒溶液发生胶体渗透反应, 表现出一种独特良好的吸附作用,吸附白酒发酵中产生的异味。 磷脂:磷脂是一类含有磷酸的脂类,机体中主要含有两大类磷脂,由甘油 构成的磷脂称为甘油磷脂;由神经鞘氨醇构成的磷脂,称为鞘磷脂。其结 构特点是:具有由磷酸相连的取代基团(含氨碱或醇类)构成的亲水头和 由脂肪酸链构成的疏水尾。在生物膜中磷脂的亲水头位于膜表面,而疏水 尾位于膜内侧。 磷脂是重要的两亲物质,它们是生物膜的重要组分、乳 化剂和表面活性剂(表面活性剂是能降低液体,通常是水的,表面张力, 沿水表面扩散的物质)。 碳酸钠:性状无水碳酸钠的纯品是白色粉末或细粒。基本化工原料,广泛 用于医药、造纸、冶金、玻璃、纺织、染料等工业,用作食品工业发酵剂 碳酸氢钠:膨松剂。常与碳酸氢铵配制膨松剂用于饼干、糕点。在小麦粉 中的添加量20g.。可与柠礞酸、酒石酸等配制固体清凉饮料的发泡剂(产生 CO2)。

如chemical additive 就是指“化学添加剂”,flavor additive 为“香味添加剂”。

除此之外,它还可以做形容词,表示“附加的”,如:additive samples(附加样本);additive information(补充报告)等。

我们平时在食品外包装上经常看到This food is guaranteed additive free.(该食品保证不含添加剂)。
