四、散籽:将码味、码芡后的原料下锅炒至彼此分开互不粘连的状态。
影响散籽的三个因素是:制锅、油温、码芡。
五、兑滋汁:根据菜肴的味型要求,把各种调味品,其中要加一部分水豆粉装入一小碗内调匀,而成滋汁(调味品一般指盐、酱油、醋、白糖、味精、料酒、胡椒粉等)。
六、烹滋汁:指事先调好的滋汁,适时地从原料的周围倒下,不停动锅。
七、宾俏:指姜、葱、蒜、泡红辣椒、干红辣椒、花椒、小米辣、野山椒等。
八、汆:指动物性原料下锅刚刚煮断生。
