Add another drop of oil to the wok, followed by the garlic and the rice. Stir until well mixed (Refrigerated rice is used in this recipe because when rice is chilled, the grains don't tend tostick together. This makes it the perfect consistency for fried rice dishes.)

350g pre-cooked long grain rice (refrigerated); The consensus is that egg fried rice should be made with long grain rice
