1 目的Purpose
1.1 为防止交叉污染给食品带来的风险,特制定本文件。
This document has been prepared to prevent risks of cross contamination to food.
2 适用范围Scope
2.1 本文件适用于本公司生产区域。
This document applies to the production area of the Company.
3 职责Responsibilities
3.1 工程部负责中央空调系统的维护。
The Engineering Dept. shall be responsible for maintaining the central air-conditioning system. 3.2 生产部负责防止加工过程中交叉污染措施的实施,外包清洁公司负责过滤网的清洁。
The Manufacturing Dept. shall be responsible for taking measures to prevent cross contamination during the production process, and the contract cleaning company shall be responsible for cleaning filter screens.
3.3 质控部负责相关的监控。
The Quality Dept. shall be responsible for relevant monitoring.
4 内容Content
4.1 防止交叉污染的措施
Measures to prevent cross contamination
4.1.1 人流、物流、气流
Staff, material and Air flows
4.1.1.1 人流、物流(包括成品、原料、废品)的流向应严格按照附件“迈德乐人流物流图”中所规定的路
线;
Staff and material flows (including finished products, raw materials and rejects) shall go in strict compliance with the routes specified in the attached “Trolli flow charts of staff and material flows”.
4.1.1.2 设备自动报警时应清洁中央空调系统的过滤网,必要时更换。
When any equipment gives an alarm automatically, the filter screen of the central air-conditioning system shall be cleaned or replaced if necessary.
4.1.1.3 充气机使用的压缩空气装有0.1µ过滤器,当报警显示红色时更换。
A 0.1µm filter is installed for compressed air on the inflator, and shall be replaced when a red
alarm is given.
4.1.2 生产加工过程
Production process
4.1.2.1 与食品直接接触的专用工器具不得与非直接接触的工器具混用;
Special tools and instruments in direct contact with food shall not be used together with tools and instruments not in direct contact with food.
4.1.2.2 内包装材料的外包装不得进入包装车间;
The outer packages of inner packing materials shall not be taken into the packing shop.
4.1.2.3 人员所带的交叉污染防范见《员工个人卫生及相应设施》(TGC-SSOP-04)。
See Personal Hygiene and Employees Facilities(TGC-SSOP-04) for the prevention of cross contamination caused by employees.
4.2 监控Monitoring
4.2.1 质控部对生产区域的空气、压缩空气取样,内部实验室(空气)及送检GBA检测微生物,频率为
每月一次;内部实验室检测压缩空气固体颗粒、水分、油分含量,频率为每季度一次。
The Quality Dept. shall take samples of air and compressed air in the production area, internal lab(air) and submit to GBA microbiological testing every month; Internal lab solid artical, water, oil testing every quaterand.
4.2.2 生产管理及质控人员生产现场检查。
The production management and QC personnel shall conduct inspection on the production site.
4.3 纠正措施Corrective actions
4.3.1 当监控发现问题时,评估对产品的安全风险决定产品的处理,采取措施防止再次发生。
When any problem is found during monitoring, risks to product safety shall be evaluated to determine how to dispose of the product, and measures shall be taken to prevent recurrence.
