• 乾隆是中国古代惯于微服私访的皇帝。这一天,他又南下 扬州。广游名胜之后,自然是要填肚子要紧饱。他微服走 进了松鹤楼,见神台上放有鲜活的元宝鱼(鲤鱼)很好奇, 执意让随同拿下做好供他食用。但在那时,神台上的鱼是 用来敬神的,这种鱼是绝不可食用的。但因乾隆是皇帝, 堂馆无可奈何,于是便与厨师商议如何处理此事。 • • 厨师发现鲤鱼的头很像松鼠的头,而且又想到本店招 牌的第一个字就是个“松”字,顿时灵机一动,计上心来, 决定将鱼做成松鼠的形状,以回避宰杀神鱼之罪。菜做好 后,端给乾隆皇帝。乾隆细细品尝,感到外脆里嫩,酸甜 可口,他赞不绝口,便重赏了厨师。自此以后,苏州官府 传出乾隆来松鹤楼吃鱼的事,这道松鼠鱼就闻名于世了。 乾隆每逢节日和寿辰之日,他都要吃松鼠鱼。后来便发展 成了“松鼠桂鱼”。
