• Oh,right!It's Hot pot. • The renowned spicy hotpot was originated in Sichuan and the most authentic one is to cooked with tripe, the end-result having a taste which is typically rich and oily. This traditional soup base is further enhanced with spicy bean paste, fermented soya beans, yak butter from Ganze, Sichuan,and Sichuan pepper(hua jiao),etc. There are many kinds of ingredients, as the photos show, including sliced raw meat, seafood, vegetables, mushrooms or fungi, etc. Green tea is the perfect accompaniment to the hotpot, softening the impact of the more extreme spiciness.

Mapo Tofu was invented by a Chengdu chef's pockmarked wife decades ago in the Qing Dynasty (16441911). The cubed bean curd is cooked over a low flame in a sauce which contains ground beef, chili, and pepper. When served, the bean curd is tender, spicy, and appetizing.

一.笋鸡肉切成1厘米见方的丁,用少许盐、酱油,料酒拌匀,用湿淀粉 浆好,再拌上点油。
二.青笋切成丁。姜和蒜均切成片。把泡辣椒剁碎待用。再用汤、葱、姜、 蒜、料酒、酱油、 糖、湿淀粉、味精对面带甜味的汁。
用旺火把炒勺热放入大油,油热后投入鸡丁炒8成熟时放进泡辣椒,随 之下青笋翻炒,接着把对好的芡汁也倒入炒勺中,汁开后再翻炒均匀, 滴入醋即成。 特 点: 微甜,味鲜香,为四川传统菜之一 。

HISTORY
❖ The Sichuan Cuisine could date back to the time before the Warring-State period. At that time, the Sichuan Basin(盆地) and its surrounding areas were rich in wild animals, fruits, vegetables and fishes, and the salt and pepper. The tableware and cookware unearthed in Sichuan revealed that the initial form of
Sichuan Cuisine was established about 3,000 years ago.
