If the recipe calls for an original shape of fish, you should first gut it by cutting along the spine. Then cut parallel to the spine almost up to the top and separate the flesh from the top and bottom of the center bone. Lift out the center bone and small side bones and cut the spine away at the head and tail. Finally, wash the cavity and the outside and arrange the fish as closely as possible in its original shape.
