喝下午茶的最正统时间是下午四点钟(就是一般俗称的Low Tea)
英国人美好的晚餐
• 晚餐对英国人来说也是日常生活中最重要的一部份,他们选择的用 餐时间通常较晚,而且都是边吃边喝边聊,以促进用餐人之间的情 谊,可想见他们是属于极有自主性的民族,而一顿晚餐对他们来说 可能要花上好几个钟头!
奶油松饼(Scone)或是小蛋糕。茶有伯爵茶
(EarlGrey)、大吉岭茶(Darjeeling)、锡兰茶等。初
尝者一般首选伯爵茶。
吃点心的次序,大有学问。先是顶层的松饼或底
层的三文治,最后才是中层的甜点。想来要让舌头享
受由浅入深的滋味。记得吃松饼时千万要在中间夹上
最香的Clotted Cream和特制果酱。
较为人知的英国料理菜名餐十分丰富,标准的完全英式早餐主要包括以下几种食品 :熏肉、煎蛋、炸蘑菇、炸番茄、煎肉肠、黑布丁有时还有炸薯 条,当然还会有咖啡或茶佐餐。主食一般是炸面包片。一般来说 ,客人在吃完上述的一大盘食物以后,实在是没胃口再“消灭”主 食了。但炸面包片也非常诱人,是选用烤制两天后的面包,切片 后用中火在锅里加黄油煎烤,出锅时焦黄酥脆,让人不能善罢甘 休。
• 英国人的午餐很快就解决,不像意大利人。通常午餐 只需三十到四十分钟,许多英国人吃三明治,或许是 因为三明治是英国发明的。通常人们早上在家做好三 明治,然后在午餐时间食用,成份为面包片夹猪肉火 腿生菜叶奶酪罐头酸黄瓜等,三明治是英国人的便当 。同样受欢迎的午餐为烤马铃薯。

英国是属于西欧各国其中之一, 它的地理位置于欧陆西侧的大西 洋上,其纬度在50度以北,因受 北大西洋洋流的调节及西风终年 的吹拂,成为冬暖夏凉,终年有 雨的温带海洋性气候。主要发展 有:栽种饲料作物及牧草,并发 展酪农业,但是,由於其本身的 食粮及畜牧产品均不足以自给, 需要依赖进口,因此,使其在料 理烹调上多少都受到外来资讯的 响影。不过,英国本身是个历史、 文化悠久的国家,所以他们在料 理上多少还是保留了原有的传统 饮食习惯及烹调技于巧。

英国人以英、法式西餐为主 ,口味清淡 ,喜欢吃清炖菜 ,喝清汤 ;讲究原汁原 味 ,不喜欢吃浓汁的菜 ,不吃辣。英国菜的调料中很少用酒 ,调味品大都放在 餐桌上 ,用餐时根据各自口味自由挑选。副食品有牛肉、羊肉、鸡、鸭、鸡 蛋、野味、黄瓜、生菜和水果等。早餐常吃熏咸肉、烩水果、麦片、桔子果 酱等 ,下午则习惯于喝咖啡 ,吃蛋糕和三明治等茶点 ,尤其爱吃隔水蒸的布丁 和奶油蛋糕。此外 ,进餐前有喝酒的习惯 ,英国苏格兰的“威士忌”世界闻名。 在西欧名民族中 ,英国人最喜欢喝茶。早晨起来一杯浓红茶 ,午后三点多钟喝 “午茶”。而且他们大多喝的是加味茶 ,如把红茶叶子揉碎 ,浸泡后过滤倒出 茶叶 ,再掺入桔子、玫瑰、薄荷、柠檬、鲜奶等 ,可分别制成“伯爵红茶”、 “玫瑰红茶”、“薄荷红茶”、“柠檬红茶”和奶茶等等。英国烤牛肉是用 厚而嫩的上等牛里脊添加芥末烤成 ,吃时配有带咸味的约克夏布丁蛋糕 ,用来 蘸吸盘中的肉汤。
