Sweet and sour pork ribs (糖醋排骨)Ingredients(配料):
Fresh pork ribs hacked short 750G(750G排骨切断)
Table salt(食盐)
Ginger(生姜)
Light soy sauce(生抽)
Dark soy sauce(老抽)
Chinese vinegar(醋)
Green onion(葱)
A big spoon of Chinese cooking wine, normally SHAOXING yellow rice wine(黄酒一大勺)
A bit of white sugar(糖)
Direction(做法)
1.Cut the pork into 3cm-4cm cubes, wash and clean in tap-water.
2.Marinate in one tablespoon light soy sauce and two tablespoon Chinese cooking
wine (yellow rice wine) for 20 minutes.
3.Ginger and green onion cut into pieces, be ready.
4.Heat the oil spread 70 (surface oil smoke began to run), deep-fry the pork ribs.
Stirring constantly with chopsticks until Ribs are golden brown and then get out them.
5.Add some more oil if there’s no oil, heat the pot with big fire. Add ginger and
green onion pieces, when there’s good smell add ribs with 2 tablespoon light soy sauce, 2 tablespoon dark soy sauce. Add warm water to immerse the ribs, just immersion.
6.Add 4 tablespoon sugar and 2-3 tablespoon Chinese vinegar to boil about 30-40
minutes with small or medium fire.
7.30-40 minutes later, taste it. If it’s not enough add some salt, sugar. Set big fire to
stir for quick-drying until it’s getting to be dry. Add one tablespoon vinegar before get the ribs out.。
